25.01.2022 Love your job and never work a day in your life Fun FIA fact - I started studying migration law at the age of 51, and quit my secure job as a finance director shortly after. I felt a niggling dissatisfaction with the work I was doing, and knew that there had to be more in life. It was a risk making the decision to move to Australia a few decades prior. Heck, as long as the risk is worth the reward, isn’t it a risk worth taking? I’ve endured many setbacks, criticisms, and t...ough times. But it’s all been worth it. There’s nothing else I’d rather be doing. 21.01.2022 Recently the Australian Culinary Federation sought entries for the Lakanto Most Outstanding Pastry Chef 2020 competition and today the results were announced. W...e are thrilled to announce that Axial International College Townsville student John Cedrick Villanueva has done exceptionally well and taken out the runner's-up position. Congratulations Cedrick - whilst the top prize was just out of reach this time, your entry - 'Falling into Summer' was rated incredibly well by the judging panel, out-scoring entries from much more experienced pastry chefs around the country. We are all so very proud of you. The Lakanto Most Outstanding Pastry Chef 2020 competition was open to all chefs, cooks, apprentices & culinary students around Australia. They were required to prepare cook & serve 1 portion of a dessert suitable for use in a restaurant service. The dessert was to include 4 components (not including sauce) with appropriate garnish, showcasing a variety of techniques. Entrants submitted their recipe & supporting photographs to the Culinary Committee & David Wingate from Lakanto for judging. I think we can all agree that 2020 was probably the hardest year we’ve all experienced. It might even be the hardest year our entire generation has experienced. ...
