24.01.2022 Polenta chips, mushroom/brussel sprouts/onion/pine nuts in balsamic vinegar & thyme:)) polenta chips: boil 3 cups of stock, whisk in 1 1/2 cup polenta till starts to thicken, add grated Parmesan. Store in flat dish in fridge, cut into fingers:))

21.01.2022 Most of the time I make my burgers from leftover roasted veggies, add some herbs/spices, beans or lentils. Egg and chickpea flour/ breadcrums. Blend in food processor and maybe even add some walnuts! My burgers are never the same! don’t forget to freeze patties individually and fry frozen! #healthyfood #quickandeasymeals #veggieburger

13.01.2022 Chinese veggies with garlic sauce Eggplant, salt, rinse, pat dry Zucchini Pak Choy ... Spring onion Capsicum Knob of Ginger, chopped 3-4 cloves of Garlic, chopped Mix together 3/4 cup Water, 2tbsp Tamari, 2 tbsp Oyster sauce, 1 tbsp Hoysin, 2 tbsp sweet Chili sauce. Fry Garlic/Ginger in coconut oil Add Eggplant/Zucchini/Capsicum Add remaining veggies. Add sauce, then add some cornflour/water to thicken sauce Seriously you can use any veggies! Experiment! And of course add meat/chicken when frying Garlic/Ginger if you like:)
