22.01.2022 There’s not much better on a cool fall day than a warm, comforting and nutritious soup! Try this recipe from Standard Process for Roasted Garlic and Sweet Potato Soup! Ingredients: -6 medium sweet potatoes, peeled and sliced -1 head of garlic... -1 medium onion, chopped -2 Tbsp olive oil, divided -6 cups chicken broth -1 cup of water *Optional: Fresh chopped herbs, toasted almonds or pumpkin seeds, olive oil drizzle Directions: -Preheat oven to 350F. -Rub sweet potatoes with 1 TBSP olive oil and place on baking sheet. -Wrap the head of garlic in foil and place on the baking sheet with potatoes. -Bake for 30 min or until sweet potatoes are soft. -Heat remains 1 TBSP of olive oil in a sauté pan with the onions. Cook until translucent, about 3 minutes. -In blender or food processor, add cooked onions, garlic cloves (removed from skin) and about half the potatoes. Puree thoroughly. -Transfer to a large soup pan and add all remaining ingredients.
