Heres a sneak peek inside the 24-page baking pull out Tray Baked Honey Cakes with Chocolate Topping Whip up a simple batter, bake in a tray, then slice and decorate with chocolate. Easy and elegant! Preparation time: 20 mins | Cooking time: 25 mins | Makes 24 Directions 1 Preheat oven to 180C. Grease a 30 x 20cm slice tin with melted butter, then line with baking paper. Put extra butter and honey in a small saucepan over a medium heat. Cook, stirring occasionally, until smooth. Pour mixture into a large bowl. Cool until lukewarm. 2 Gradually add eggs to mixture, stirring constantly, until combined. Sift flour, baking powder, cocoa and ginger over mixture. Add almond meal, then stir until well combined. 3 Pour into prepared tin and spread out evenly. Bake for 25 minutes or until light golden and cooked when tested with a skewer. Cool completely in tin. 4 Put dark chocolate in a medium heatproof bowl set over a saucepan of simmering water, taking care base of bowl does not touch water. Stir until smooth. Repeat with white chocolate in a separate bowl. Spoon white chocolate into a piping bag. 5 Remove slice from tin and cut into 24 pieces. Spread dark chocolate over each slice. Snip corner of piping bag, then pipe a thin white chocolate line down centre of each piece. Using a toothpick, form a pattern by blending chocolates. Add rice to a large saucepan of boiling, salted water. Cook until tender. Drain. Spread onto a large oven tray. Refrigerate until cold. 2. Combine prawns and curry paste in a large bowl. Toss to coat. 3. Heat a large non-stick wok over a high heat. Add prawns in two batches. Stir-fry for about 2 minutes, or until prawns are lmost cooked. Remove. 4. Add peas, corn and capsicum to same hot wok with rice. Cook, stirring, for about 3 minutes or until hot. Return prawns to wok with spring onions. Stir until all ingredients combined. 5. Heres a sneak peek inside the 24-page baking pull out Tray Baked Honey Cakes with Chocolate Topping Whip up a simple batter, bake in a tray, then slice and decorate with chocolate. Easy and elegant! Preparation time: 20 mins | Cooking time: 25 mins | Makes 24 Directions 1 Preheat oven to 180C. Grease a 30 x 20cm slice tin with melted butter, then line with baking paper. Put extra butter and honey in a small saucepan over a medium heat. Cook, stirring occasionally, until smooth. Pour mixture into a large bowl. Cool until lukewarm. 2 Gradually add eggs to mixture, stirring constantly, until combined. Sift flour, baking powder, cocoa and ginger over mixture. Add almond meal, then stir until well combined. 3 Pour into prepared tin and spread out evenly. Bake for 25 minutes or until light golden and cooked when tested with a skewer. Cool completely in tin. 4 Put dark chocolate in a medium heatproof bowl set over a saucepan of simmering water, taking care base of bowl does not touch water. Stir until smooth. Repeat with white chocolate in a separate bowl. Spoon white chocolate into a piping bag. 5 Remove slice from tin and cut into 24 pieces. Spread dark chocolate over each slice. Snip corner of piping bag, then pipe a thin white chocolate line down centre of each piece. Using a toothpick, form a pattern by blending chocolates. Whether youre planning a seafood bonanza, a traditional affair or a cocktail party, this issue has just the recipe for you! Hazelnut meringues with chocolate chestnut ga...nache 4 eggwhites 1/4 tsp cream of tartar 1 cup caster sugar 100g roasted hazelnuts, ground 100g good-quality dark chocolate, chopped 250g chestnut puree (see tips, left) 300ml double cream 1 Preheat the oven to 100C fan-forced (120C conventional). Line two baking trays with baking paper. 2 Using an electric mixer, whisk the eggwhites and cream of tartar to soft peaks. Gradually add sugar, 1 tablespoon at a time, whisking well between each addition, until meringue is thick and glossy and sugar is completely dissolved. Swirl through the ground hazelnuts. Drop tablespoons of mixture onto trays, allowing room for spreading. Bake for 30 minutes or until meringues are dry to touch. Turn off oven and leave door ajar to cool completely. 3 Melt the chocolate in a heatproof bowl over a saucepan of simmering water (making sure the pan is not in contact with the water). Remove from the heat and stir in the chestnut puree and 4 tablespoons of the cream. Set aside to cool. 4 Use a palette knife to spread the melted chocolate onto the bases of half the meringues. Put chocolate side up on a tray. 5 Whip the remaining cream to soft peaks. Spread the cream over the remaining meringues and sandwich together. Serve.
