Crust: 15 Medjool dates, pitted 1.5 cups raw almonds tsp salt Filling: 350g soaked cashews 1.5 cups coconut cream (thick part of a can of coconut milk) tsp salt 1 tsp vanilla extract cup maple syrup Colouring (optional): 1 tsp blue spirulina 1 tsp pink pitaya 1. Soak the cashews in cold water for at least 6 hours, or boil them for 20 minutes. 2. Blend together the ingredients for the crust in a food processor. Press the dough into a 20cm round cake tin lined with parchment paper. 3. For the filling, simply add all ingredients to a blender. Blend on high for 60 seconds until completely smooth. Divide the filling equally into 3 different bowls. Add about 1 tsp of pink pitaya and blue spirulina to two of the bowls and mix. 4. Pour 1 tbsp of each mix onto the crust top. 5. Heres everything youll need to make this delicious dessert ... "Vanilla Sponge Cake: 1 cup all-purpose flour (or gluten-free all-purpose flour) cup almond flour cup coconut sugar tsp baking powder Pinch of salt cup non-dairy milk 3 tbsp maple syrup 1 tsp vanilla extract 3 tbsp oil (neutral-tasting) 1 tbsp apple cider vinegar Whipped Cream: 1 x 15oz can full fat coconut cream, chilled (the firm part only) 1 tbsp maple syrup tsp vanilla extract Strawberry Jelly: 500g strawberries, halved 300ml natural berry juice 1 tbsp plant-based thickener (carrageenan or agar agar powder) Method: 1. Combine the dry cake ingredients in a large bowl and the wet ingredients in another small bowl, before combining with a spatula. 2. Preheat the oven to 175C and line a baking dish with parchment paper. Pour the batter in and spread evenly. Bake for 18-20 minutes until a toothpick inserted comes out clean, then and allow to cool down. 3. Take your coconut cream and scoop the firm part into a bowl. Add the maple syrup and vanilla extract and use a hand mixer to whisk everything together until fluffy, then place back into the fridge. 4. Once the cake has cooled down, spread the whipped cream on top and place into the fridge. Wash, de-stem and halve your strawberries and arrange them on top of the cream. 5. Place all jelly ingredients into a small saucepan and whisk together. Bring to a boil, then reduce the heat and leave to simmer for 1 minute, take off the heat. Let the jelly mixture cool down a bit, whisking constantly. Pour it over the strawberries in an even layer and immediately place back in the fridge to firm up!" And enjoy See more

Combine all of the sauce ingredients except for fish sauce (if using) in a small saucepan and bring to a boil on a medium heat. 2.
