11.01.2022 Peter Nicholson of Nicholson Fine Foods is sharing more than good cheer this Christmas. As both a board member of The Gallery Foundation and a creator of highly original and award-winning food products, Peter is passionate about art and food. Indeed, he knows more than a few culinary secrets and is sharing one in time for summer, while also promoting a fundraiser that supports the visual arts in the Clarence Valley. One of my favourite summer cocktails involves blending a sh...ot of Essence of Hibiscus Flowers with a glass of prosecco. Here I’ve paired it with Symphony Hill ‘Angel Wings’ Prosecco, both of which are available in Christmas hampers that are currently on sale via The Gallery Foundation website, said Mr Nicholson. "The cordial has a gorgeous red hue; it's high in vitamin C content and is an ideal mixer for sparkling wine, gin or just mineral water. Each bottle contains 12 flowers floating in exotic fruit flavoured syrup that will complement sweet and savoury foods. Think flavours of raspberry, plum, watermelon and rhubarb. What really hit home was the stunning potential and impact this wonderful place will have on the community as a whole, once complete.
