25.01.2022 2 tablspoons butter or marggarine 1/4 cup honey or maple syrup 1/4 cup brown sugar or coconut sugar... 1 can pineapple slices drained 2 teaspoon vanilla 1 cup honey or maple syrup 1/4 cup butter or margarine 1 cup pineapple juice and enough water to make 1 cup of liquid 2 tablspoons yoghurt 3 cups wholemeal flour 4 teaspoons baking powder 1/2 teaspoon salt Preheat oven to 180 degrees celsius Melt first 2 ingredients together Add date sugar and mix Lay pinapple rings in the syrup Mix the next 5 ingredients well (wet ingredients) In a separate bowl add the next 3 ingredients toghether (dry ingredients) Add the wet ingredients to the dry ingredients mixing until there are no lumps Spread gently over the pineapple slices bake in the oven for 40min or until a sharp knife comes out clean when inserted into the centre of the cake. Turn it onto a plate or tray as soon as it comes out of the oven and serve straight away while still hot.

23.01.2022 INGREDIENTS 1 Can Chickpeas (Drained - Use the liquid to make delicious mayo) 1/4 cup Vegan Mayonnaise 1 Nori Sheet (Finely Chopped) or dulse flakes 1 tablspoon... 1/2 Small Onion (Finely Chopped) 1 Tbsp Lemon Juice 10 Capers (Finely Chopped) 1/2 tsp Garlic Powder 1 Tbsp Nutritional Yeast 1 Tbsp Soy Sauce or Tamari for a GF version 1/2 Tbsp Dijon Mustard 1/2 tsp White Vinegar Sprinkle Himalayan or black salt Sprinkle Ground Black Pepper INSTRUCTIONS Add the chickpeas to a mixing bowl and mash them with a fork. Add in all the other ingredients and mix well Can be made into sandwiches, spread on toast, great as a summer salad bowl. The list is endless. Please note: I kept calling it garlic salt in the video, it's ok to use garlic salt instead of powder, but omit the salt. 22.01.2022 INGREDIENTS Base 125g butter 1/4 cup brown sugar... 1 cup plain flour 1/4 cup self-raising flour Filling 400g can sweetened condensed milk 30g butter 2 tablespoons maple syrup 3 teaspoons coffee substitute (granulated or powdered) 1/2 cup walnut chopped roughly Topping 1 cup plain flour 2 teaspoons cinnamon 1/3 cup brown sugar, firmly packed 125g butter INSTRUCTIONS Base Cream butter and sugar until combined and stir in sifted flours Mix to form a firm dough Press evenly over base of well-greased (or line with baking paper) 30cm x 25cm baking tin Bake in moderate oven for 10 until starting to brown around the edges Cool Filling Combine condensed milk, butter, golden syrup and coffee in saucepan stir over medium heat until mixtures begins to bubble on base of pan. Continue stirring briskly for about 3 minutes, or until mixture is thick and beginning to catch on base of pan. Pour over the cooled base Sprinkle walnuts over the top Topping Sift dry ingredients into mixing bowl, rub in butter Mix until a firm dough Refrigerate 30 minutes before grating coarsely over the filling Bake in moderate oven for 10 to 15 minutes, or until the topping is firm to the touch. Stand 15 minutes and leave to cool in tin before cutting into slices or squares
