06.01.2022 Pasteurisation of the mix is a fundamental process in the production of our gelato. What is pasteurisation? It is a delicate process by which milk and other solids included in the mix are heated to temperatures (68C - 84C) ensuring the elimination of any unwanted bacteria in the product. Pasteurisation is not only important for hygienic purposes, but it also allows for the gelato mix to amalgamate properly - the breakdown of any fats, the proper hydration of any thic...keners and the dissolution of any sugars used. Overall, through this interesting process, the quality of the gelato mix increases exponentially.
