21.01.2022 FOODIE FRIDAY featuring @inkarlieskitchen Healthy Chocolate Chip Oat Cups! This is the perfect, most delicious Friday afternoon pick me up you need! RECIPE... Ingredients: 2 medium sized ripe bananas 1/4 peanut or almond butter (I used peanut butter) 1/4 cup milk of choice 2 tbsp honey or maple syrup 2 cups rolled oats 1/2 teaspoon cinnamon 1/4 teaspoon salt 1 teaspoon vanilla extract 1/2 cup walnut pieces 1/4 cup of chocolate chips (I use noshu sugar free) Method: 1.Add the banana to a large mixing bowl and mash until smooth with a fork 2.Mix in peanut butter, milk and vanilla and mix until smooth with a spoon 3.Add the rest of the ingredients and stir to combine. 4.Prepare a standard-sized muffin with with a light coating of non stick spray (I use olive oil) and scoop an even amount into the muffin tins. Press down the batter so it’s even and bake for 18-20 minutes on 180 F or until golden. Let cool then top with peanut/ almond butter!
