Oils high in saturated fat are the best to use for cooking These oils are solid at room temperate and can resist the most heat without going rancid. Oils high in polyunsaturated fat are the worst to use for cooking These oils are liquid at room temperature and are extremely fragile when heated.... More often than not, they are already rancid when you buy them They are flavourless to hide this... The oils on the right are also extremely high in omega 6, which causes inflammation. These oils are actually the #1 source of omega 6 in modern diets (70% of total omega 6 consumption). To make matters worse, these oils also contain trans fat which is often not recorded on the label Olive oil and avocado oil fall in the middle Best to consume raw or use for low heat cooking.
