24.01.2022 This is a wonderful Gluten Free & Dairy Free - Rhubarb, Almond & Coconut Cake - Ingredients 150gm Coconut Oil, firm 160gm Coconut or brown sugar... 3 Eggs 250ml Almond Milk 55g Coconut flour 180gm Almond Meal 50gm Slivered Almonds 200 gm thinly Sliced Rhubarb (2 Sticks) Directions Preheat fan-forced oven to 180c Mix/beat together coconut oil & sugar until fluffy & creamy Add 1 egg at a time, scraping down the sides if needed. Once all eggs are combined, add milk to combine Add coconut flour & almond meal & 100gm of sliced rhubarb combine well. Spoon batter into baking paper lined solid base round cake tin (DO NOT use a spring tin) Scatter the remaining 100gm slice rhubarb on top Bake for 60 minutes until a skewer comes out clean - This is a very moist dessert cake Cool completely before turning out of tin or cutting #gippslandrhubarb #glutenfree #dairyfree #healthycake
