19.01.2022 Healthy Recipe: PINNACLE CAJUN SALMON PREP TIME 10 mins | COOKING TIME 15 mins | SERVES 2 INGREDIENTS 500g Wild Caught Atlantic Salmon skin on 1 clove Garlic minced 1 Tsp Cajun Spice 1 Tbsp. Lemon Juice... 1 Tbsp. Extra Virgin Olive OIl Black Pepper METHOD Place all ingredients in an airtight container and marinate in the fridge for 2 hours Heat some of the marinade in a frying-pan, and use to cook salmon on both sides (careful not to overcook salmon should remain almost translucent and silky through the middle) Serve immediately with steamed vegetables or a fresh salad Wild Atlantic Salmon has lower calorie and fat contents than farmed salmon. Olive Oil 1/ Brown Onion chopped 3 cups Vegetables cooked* 150g shaved Ham ... 6 Eggs 3 Tbsp. Skim Milk or Water cup Light Tasty Cheese Grated cup Parmesan Cheese grated 1 Tbsp. dried Oregano 1 Tsp Paprika Black Pepper *Use cooked leftover vegetables including roast potato, sweet potato, or pumpkin. Combine with fresh vegetables like zucchini, capsicum, broccoli, asparagus or broccoli METHOD Heat oven to 120 degrees Celsius. Heat olive oil in an oven proof pan, saut the onion until clear Add the ham and vegetables to the pan to combine with the onion In a bowl whisk together the eggs, skim milk, tasty cheese, herbs and spices. Pour into pan over vegetables.
