20.01.2022 WHAT's Happening In Mandy's Kitchen? Tempura Calamari. (Another delicious recipe for my cookbook.) Thought I would experiment making a Tempura batter that was both gluten and grain free. Here it is, first go and it's perfect! Now, it's been over 10 years that I have had a wheat-based Tempura batter, so I have forgotten what it was supposed to be like. Well it really does not matter because this one is crispy, incredibly light and delicious!... So there is no need to continue to experiment. This tapioca and cassava flour batter is sensational :)

17.01.2022 May brilliant things, good health, happy events and wonderful people come your way in 2018. There's many things we would have learnt and experienced from our past year I'm sure... some good, some not so good... some amazing and some sad. We can choose to move forward from these people or events, or we can choose to stay stuck in the past. I love this little clock below. It's amazing how much better, lighter and more refreshed it made me feel as I watched the dial effortl...essly erase the 'not-so-good' emotions, frustrations and pain from this past year. They just seemed to disappear (or became much less important than I imagined them to be). It helped to open up and make way for brighter, happier and more positive and exciting possibilities. I wonder what unexpected and exciting new things are going to happen for YOU today, and every day in the year to come... and way beyond? Make it an A*W*E*S*O*M*E year my friends and have fun! 11.01.2022 Pot of Gold Rainbow Fruit Tray - Healthy Food for St Patrick's Day To make this tray, simply create arched rows of fruit that represent the colors of the rainbow. Ideas: RED - strawberries, raspberries, watermelon, cherries, pomegranate, plums... ORANGE - oranges slices or segments, peaches, cantaloupe, papaya YELLOW - pineapple, mango, bananas, yellow watermelon, golden kiwi GREEN kiwi, honeydew, green grapes BLUE blueberries, blackberries, plums PURPLE - red grapes, purple figs, plums POT OF GOLD FRUIT DIP 16 oz Fat Free Vanilla Greek Yogurt 16 oz crushed pineapple in juice, drained 1 T + 1 T raw honey DIRECTIONS Fully drain juice from crushed pineapple. In a large bowl mix together crushed pineapple, yogurt & 1 tablespoon raw honey. Separate into 2 small serving bowls or ramekins to create the Pots of Gold at the ends of the rainbow. Drizzle with remaining raw honey.

As witnessed by Robyn McKinney Magpie Bread the Story While attempting to take photos of her latest creation, Mandy just couldn’t get the lighting right, so she took the tray outside onto the back patio to take some more photos. She placed the tray with the loaf of bread (with a few slices cut for the photo) onto a stand.... Stepping back to the photos, and clicking off what she thought were her perfect shots, she was suddenly photo-bombed by some of the locals who unceremoniously helped themselves and let their friends know of the great feast to be had at Mandy and Craig's. At least 25-30 magpies had a grand time taste-testing the next recipe for Mandy’s book. It’s a shame that they can’t write a testimonial. This bread is now nicknamed Magpie Bread. See more

New Research Links Gluten Sensitivity to Multiple Autoimmune Diseases Research continues to link the autoimmune spectrum of diseases to gluten sensitivity. In a recent study, gluten intolerance was found to be present in patients with multiple types of autoimmune conditions: Results of our studies revealed in the group of 110 patients with diagnosed gluten enteropathy, coexistence of autoimmune disease, such as diabet...es mellitus type 1 in 7.2% cases, hyperthyreosis on 1.8% of cases, vitiligo in 0.9% of cases, primary biliary cirrhosis in 2% of cases and rheumatoidal arthritis in 0,9 of cases. In the group of 80 ulcerative colitis patients, coexistence of celiac disease basing on serological histopatological investigation was found in 4 patients (5%). A previous poston Gluten Free Society showed the connection between gluten induced liver disease (autoimmune hepatitis). Now another new study points more autoimmune disease overlap in patients with autoimmune hepatitis. A total of 111 patients (40%) were diagnosed with additional autoimmune diseasesautoimmune thyroiditis was the most common concurrent disease (28 patients, 10%). Other concurrent autoimmune diseases comprised vitiligo (5 patients), rheumatoid arthritis (5 patients), Sjogren syndrome (4 patients), ulcerative colitis (4 patients), conjunctivitis (4 patients), celiac disease (3 patients), systemic lupus erythematodes (2 patients), type I diabetes (2 patients), multiple sclerosis (2 patients), polymyalgia rheumatica (2 patients), and urticaria (2 patients).
