We love a great recipe that’s not only nourishing, but delicious..and this adaption from the Happy cookbook by the gor...geous @yummololaberry is perfect From a gorgeous brunch to wow picnic food this easy GF and grain free recipe ticks all the boxes . We like to mix it up and do a version that’s a little like the traditional Lebanese Kabak Mucveri, with fresh dill. . RECIPE * 3 zucchini’s * 3 eggs * 3 tablespoons coconut flour * 3 tablespoons coconut oil * 1 teaspoon tapioca starch * 1 teaspoon potato starch * 3 sprigs of dill chopped * Salt to taste - 1-2 tsp * Pinch Cayenne or black pepper * 1 tablespoons feta or nutritional yeast for DF . Grate zucchini, add salt and let sit for a few minutes. Then thoroughly squeeze out all liquid. Add in eggs and stir, flours and remaining ingredients.. combining to a batter. Splosh a good amount of healthy oil, and fry in batches around 2-3 minutes per side. .
