17.01.2022 Are the kids bored with regular school snacks? Try these Lunchbox Friendly Berry Banana Crumble Muesli Bars Ingredients... Wet Ingredients: 1 egg 1/3 cup honey or maple syrup 100mL extra virgin olive oil or butter Dry Ingredients: 3/4 cup (110g) mixed seeds such as linseeds, sunflower seeds and sesame 1 cup gluten free (160g) or wholemeal plain flour 1 cup (86g) quinoa flakes 1 cup (52g) flaked coconut 1/2 cup (52g) desiccated coconut 1 tbsp ground cinnamon Filling: 1 cup berries, fresh or frozen and defrosted 1 banana, sliced 1 tbsp vanilla extract Method 1. Preheat oven to 180C and line a large baking dish (20cm x 20cm) with greaseproof paper. 2. In a mixing bowl combine all wet ingredients and whisk well. 3. In another large bowl combine all dry ingredients, mix, then add wet ingredients to dry ingredients and mix again. 4. Pour half the mix into the baking dish, press out evenly using your hands then place in the oven to cook for 10 minutes. 5. Whilst cooking mix together ingredients for filling. 6. Once the base is cooked, pour in the filling and then top with remainder of muesli mix. Move around a little so some berries poke through if you wish, then place in the oven to cook for a further 30 minutes. 7. Allow to cool completely in tin, before slicing and serving. 8. 03.01.2022 Still hungry after dinner? A great recipe for dessert CHOCOLATE MOUSSE... INGREDIENTS: 325g dark chocolate 500ml cream 4 egg yolks 3 egg whites 50g superfine caster sugar vanilla bean, split and scraped METHOD: 1. Measure and weigh out all ingredients in preparation 2. Finely chop the chocolate and melt it over a double boiler to keep warm. 3. Whip the cream until soft peaks form. 4. Make a sabayon by combining the egg yolks, sugar and vanilla bean. Cook over a double boiler, whisking continuously until the egg yolks become thick and glossy, then remove the sabayon from the heat. Have the whipped cream ready nearby. 5. Pour all of the melted chocolate into the warm sabayon and, with a large hand-whisk, beat as fast as you can to incorporate all the chocolate. The chocolate will begin to seize at that point you’ll need to add 1 large kitchen tablespoon of whipped cream. 6. Continue to whisk. The cream will help soften the mixture. Add another large spoonful of cream and whisk vigorously for another minute. The chocolate, egg and cream mixture will now be more workable and relatively stable. You should have half the whipped cream left. Immediately whisk the egg whites until soft peaks form. 7. Place the whisked egg whites and the remaining cream on top of the chocolate mixture and gently fold through until well incorporated. 8. Place the mousse in the refrigerator for a minimum of 4 hours before serving.
