24.01.2022 After having a divine Italian meal out a few weeks ago, we realised we needed more fennel in our lives! Recreating restaurant dishes doesn't always work out well - but luckily, this fennel and orange salad is so simple and tasty that you can't really go wrong. Add some red onion, quickly pickled with apple cider vinegar and rice malt syrup for some extra zing ... Fennel is on special this week, as is asparagus, which was heavenly in this quiche as well. 24.01.2022 Our kale here at the farm is still doing amazingly well through this warmer weather thanks to the recent rain. So it's the perfect time to grab a bunch from our store and whip up our kale salad with almonds and parmesan! Knowing 'what to do with kale' has become one of our specialties over the years of growing this superfood. This salad is nutty, crunchy, and the mustard dressing will keep you coming back for more!... The original version uses brussel sprouts, but we find that cabbage works just fine, and is usually more available. Zucchini's are coming into season and they're on special this week! www.secondnatureorganics.com.au Zucchini slice is a tried and true favourite in our household, and it's so easy to make! ... 1. In a bowl, mix together five eggs with a cup of self-raising flour. 2. Stir in a cup of grated zucchini, a cup of grated cheese, and a good handful of chopped bacon (ideally nitrite-free). 3. Place in a well-greased baking dish and cook in a moderate oven for around 20 minutes. This slice is beautiful served hot with a crisp green salad on the side. It's also good served cold in bite-size pieces as a healthy lunchbox option or when you need to bring a plate to share.
