24.01.2022 RECIPE Balance out all that chocolate with this two-ingredient mac & cheese recipe from @foodsofjane What you'll need: A wheel of Brie... Cooked macaroni or pasta of your choice 1. Remove the top layer from the rind of Brie 2. Scoop out the centre. 3. Add the creamy centre into a small saucepan. Over low heat melt the brie with a splash of heavy cream or milk to thin out. 4. Pour the melted brie cheese mixture over the cooked pasta and stir to combine. 5. Spoon the cooked pasta mixture back into the empty wheel of brie and dig in! In a shaker place the Mozart Chocolate, gin, fresh cream and egg white with ice cubes and shake up until creamy. Strain into a glass and garnish with nutmeg or chocolate, it’s up to you! 11.01.2022 RECIPE What pairs perfectly with ? Coffee of course! And, you can't go past a classic Tiramisu recipe from That's Amore Cheese 300mL espresso coffee... 4 eggs 100g sugar Pinch of salt 300g savoiardi biscuits 500g Mascarpone 2 tbsp marsala liquor or brandy Dutch cocoa powder for dusting 1. First up, make the coffee, set it aside, and leave it to cool. 2, Separate egg whites from yolks into 2 different bowls. 3. Whisk the egg yolks with sugar for 5-6 mins, until pale and fluffy. Add mascarpone and whisk gently until smooth. 4. Beat the egg whites with a pinch of salt until stiff, add whites to the mascarpone mixture and fold gently. Set the cream aside. 5. When the coffee is cool, add the marsala and stir. Dunk the savoiardi in the coffee mix, quickly and one at a time, and arrange them in a ceramic tray creating your first layer. 6, Pour half of the cream mixture over the savoiardi layer. Add another layer of soaked biscuit and spread the remaining cream. 7. Dust with cocoa powder and leave in the refrigerator to set for at least 4 hours or overnight @thatsamorecheese exhibiting in Melbourne Tickets for Sydney Show on sale now.

03.01.2022 RECIPE Easy Chocolate Truffles Did you know ganache is an emulsion of chocolate and any liquid? Whilst traditionally it’s associated with heavy cream, ganache can be made with plant-based cream, milk, alcohol, fruit purees, sugar syrup, and even water. So perfect for those who are dairy-free or plant-based The key to a decadent ganache is the quality of chocolate used. So we’ve teamed up with Promperu Australia & NZ the Peruvian Trade agency, as one of the world’s largest... exporters of cacao, Peru is known for being the world’s best when it comes to quality Fair Trade chocolate. Tomorrow we’re going LIVE with award-winning chocolatier Treat Dreams at 12pm AEST to teach you how to make the perfect Chocolate Truffles. Here’s what you’ll need to join along: Ganache: 40g sugar 60ml water 160g chocolate Ideally 70% dark 10g cacao nibs Coating: 100g quality cacao powder beginner option or 200g quality 70% dark chocolate advanced option 1. MAKE SUGAR SYRUP: Combine the sugar and water in a heatproof bowl. Heat in the microwave using 20-second bursts until all sugar crystals have dissolved. Set aside. 2. MELT CHOCOLATE: Break up 200g of chocolate into a microwave-safe bowl. Microwave in 20-second bursts, until melted, stirring well between each round. You can also do these steps on the stove; sit the bowl over a pot of barely simmering water (a bain-marie) and allow the sugar/chocolate to melt, stirring occasionally. 3. COMBINE: Add warm sugar syrup (40-45c) to your melted chocolate (40-45c). Stir until well combined and glossy. 4. FORM: Pour into the prepared tin and gently tap the tin on the bench to evenly spread. Sprinkle with cocoa nibs and set in the fridge for 4-12 hours. Remove and slice into cubes with a warmed knife. 5. COAT: Beginner: Just prior to serving, place truffles in a bowl of cocoa powder and gently toss to coat. Use a sieve to gently shake off excess powder, then serve immediately. Advanced: Temper chocolate, then use a fork to dip and coat truffles. Place on a tray lined with baking paper, using pairing knife to remove from fork if needed. So ditch the blocks and make a box of chocolate truffles for gifts this Christmas
