24.01.2022 WHITE BEAN & CASHEW PESTO SALAD a super tasty and quick salad to make in a big batch for the week ahead! Ingredients: For the pesto- 1 handful of fresh basil 1 handful of spinach... 1 cup cashew, toasted 2 tbsp olive oil 2 tbsp apple cider vinegar 2 tbsp parmesan or @pimp.my.salad vegan cashew parmesan juice + zest of a lemon For the salad- 2 cans of cannellini/white beans Fresh rocket leaves 1 zucchini, sliced Cherry vine tomatoes Method: 1. Toast the cashew nuts in a frying on until golden (careful not to burn) then let cool completely. 2. Blend all of the pesto ingredients in a blender. 3. Sauté the sliced zucchini and roast or air fry the vine tomatoes. 4. Drain the beans and mix with pesto in a bowl. 5. Add the rocket, zucchini, tomatoes and extra parmesan. 23.01.2022 Try This Raw Vegan Lemon + Blueberry Cheesecake Ingredients: Base- 1 1/4 cup almonds 6 large pitted dates... 1 teaspoon vanilla extract 1 teaspoon cinnamon Filling- 2 cups raw cashews (soaked overnight) 1/2 cup melted coconut oil Zest and juice of two large lemons 2 tbsp maple syrup 300g blueberries Method: 1. Pulse base ingredients in a food processor and transfer to a lined square baking tin. 2. Place filling ingredients into a food processor for about 4 minutes until smooth and creamy. 3. 22.01.2022 Smoothie tips with @beachsidekitchen 1. Sneak in some veggies! Frozen zucchini, spinach, or steamed then frozen sweet potato or cauliflower are all very subtle flavours you probably won’t even taste. 2. Using almond/coconut/oat milk over fruit juice cuts down your sugar and makes it real creamy. 3. Add some fibre - flax seed, chia seed, oats, psyllium husk are faves. 4. Don’t fear fat! Healthy fats like a a scoop of nut butter or seeds are a great way to keep your blood sug...ar steady 5. Keep it simple! You don’t need 27 ingredients. 1-3 veggies/fruits, 1-2 superfoods, healthy fat + protein . PB&J Smoothie (2 servings) 1 cup frozen zucchini 1/2 frozen banana 1/2 cup frozen blueberries 2 tbsp flax meal 1-2 tbsp peanut butter 2 scoop vanilla protein 1 1/2 cup almond milk Handful of ice Method: 1. RECIPE- Raspberry Choc Chip Blondies! Ingredients: ... Chickpeas, drained and rinsed (1x400g can) Nut butter of choice (100g) Brown rice syrup (100g) Almond milk (60ml) Spelt flour or flour of choice (75g) @Macr0mike salted vanilla protein powder (50g) Baking powder (1tsp) Raspberries, fresh or frozen (100g+50g) Choc chips (40g) Method: 1. Preheat the oven to 170 degrees celsius and line a square cake tin with baking paper, set aside. 2. Add the chickpeas, nut butter, syrup and almond milk to a food processor and blend until smooth. 3. Add the flour, protein and baking powder and blend again until combined. (The batter should be thick). 4. Remove the blade and add the 100g of the raspberries and the choc chips and mix through using a spatula. 5. Add the batter to the cake tin and spread out evenly. Top with the extra raspberries and bake for 30 mins. 6. Allow to cool before slicing into desired size and enjoy! Store in the fridge for up to 1 week. Recipe by @mainlymonica! 19.01.2022 SAVE THIS Sweet Potato Protein Fudge Brownies with PBJ Frosting Makes: 6 large brownies! Ingredients: Wet: 1 1/2 cups Japanese sweet potato - cooked, peeled & mashed ... 1 cup almond milk Dry: 1/3 cup almond meal 1/2 cup oat flour 1/3 cup sweetener 1 scoop Macro Mike choc protein powder 1/2 cup cacao powder 1 teaspoon baking powder PB & J Frosting: Peanut butter layer: cup Macro Mike powdered PB 2 tablespoons almond milk Jam layer: 2 tablespoons Macro Mike strawberry cheesecake protein 1 tsp pitaya powder (or your favourite superfood powder) 1 tablespoon berry jam Method: 1. Preheat the oven to 180 degrees Celsius. Line a small baking tin with non-stick paper. 2. In a food processor or high-speed blender, add in the wet ingredients and blend until smooth. 3. Add in all the dry ingredients and blend until a thick brownie batter is formed. You may need to mix the batter a bit with a spatula too. 4. Transfer the brownie batter to the lined tin 5. Bake for 25-30 minutes until a knife inserted comes out just a little bit dirty. 6. Allow the brownie to fully cool before frosting. 7. Frost the brownies. Spread a layer of peanut butter first. More often than not, they contain more sugar than a donut and come soaked in cheap vegetable oils... and then slapped with some fancy buzz words on the packaging to try and trick us into thinking it's nutritious. Tsk tsk. We know better than that by now! 18.01.2022 Remember what we were saying about granolas the other day being one of the most deceiving 'health foods' in the health world? Well you can add snack bars to that list! Thing is, they can make for such a great on-the-go option so you want to get it right! When it comes to snack bars, the fruity ones are amongst those you have to look out for, because the sugar content can be through the roof. Who's experienced this? Our general rule of thumb is looking for one that's hig...h in protein, low in sugar/contains no refined sugar/naturally sweetened and is free from artificial flavours and preservatives. Turn the package over to ensure the ingredients list is short and sweet (ha! see what we did there?) and see if you can recognise all the names. If so, chances are you're onto a goodie. 04.01.2022 I'm not perfect. When it comes to conscious living I certainly don't do everything. But I always think that doing something is better than nothing. Below is my list of the top ways I try to live consciously that I know I can do sustainably and for the long term. Would love to know one thing you do? Purchased metal straws - goodbye to the plastic, I use these at home. Reusable cup - have a mini piccolo size and carry this with me everywhere I go, even if I'm on a w...alk I'll hold it the entire way and that's my commitment. Metal containers - when we have family dinners we always go home with a truckload of leftovers. My mum loves her plastic containers (sorry mum!), so now we always bring our own. A little presumptuous but taking leftovers from mum is a tradition right!? Fresh Paper - To stop my fruit and veggies going off I always place in the fridge tray and fruit bowl, makes them last at least a week longer. Water bottle - I hate purchasing plastic water bottles. I'll avoid it at all costs and always carry mine around with me in my car, on my desk, in my handbag. Recipe by @_lizzieluvs Ingredients: 1 can chick peas, drained & rinsed 1/2 small cucumber... 1/2 red capsicum 1/2 red onion 1/4 cup feta 1 can of tuna (185g) 1 can of corn (125g) Salt & pepper + Your fave fresh herbs & a spritz of lemon! Method: 1. Combine all ingredients. 2. Add your choice of dressing depending on the mood, dill mayo or a squeeze of lemon or a simple vinaigrette. 02.01.2022 Tripple Choc Protein Cookies! (vegan, GF, macro-friendly, oil-free ) Makes: 8 cookies Ingredients: 1 cup chickpea flour 1/4 choc protein powder... 2 tbsp sweetener 1/3 cup cacao powder 1 tsp baking powder 1/3 cup almond butter 1/3 cup maple syrup 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water) 50g white & dark chocolate, chopped Method: 1. Pre-heat the oven to 180 degrees Celsius, fan-forced. Line a baking tray with non-stick paper 2. Make the flax egg in a small bowl by stirring the flaxmeal with water. Set aside for 5 mins to thicken 3. In a large bowl, combine all the ingredients except for the chocolate. Add in the flax egg and fold everything together until a thick & sticky batter forms 4. Divide the batter into 8 even portions and use a spoon to form them into cookie shapes on the baking paper. (This can get a little messy) Allow 2 cm between each cookie. 5. Sprinkle the chocolate chunks over each cookie 6. Bake for 10-11 mins. Remove from the oven & allow the cookies to fully cool down, it will firm up as it cools.
