19.01.2022 Salted Tahini Choc Chunk Cookies Makes 12-15 Ingredients: 60ml (50g) olive oil 1 tbsp (30g) tahini 1/4 cup (90g) honey... 1/2 cup (45g) desiccated coconut 1 + 1/3 cup (165g) rolled or quick oats Half block of Alter Eco Blackout choc 1/4 cup/30g flour Pinch of sea salt Method: 1. Heat the oven to 160C. 2. Combine all wet ingredients in a bowl, then add the dry ingredients and stir to incorporate. 3. Scoop out roughly tablespoon-sized balls, roll to smooth them out and then press into cookie shapes on a lined baking tray. 4. Bake for approximately 20-25 minutes, or until golden and crispy. 5. Preheat oven at 180 degrees Celsius. 2. Add plant milk, boiling water, yeast and mashed bananas into a mixing bowl. 3. Add the flour, 1/4 cup coconut sugar and salt, mix and kneed for 5 minutes or until well combined. 4. Cover the bowl and leave the dough to rise for 1 hour. 5. Sprinkle some flour onto the bench and roll out the dough. 6. Spread the vegan butter onto the rolled out dough. 7. Sprinkle evenly with the coconut sugar and the cinnamon. 8. Tightly roll the dough into a long roll (seam facing down). 9. Cut the roll into 6 or 8 pieces and place in tray. 10. Bake for 20 minutes or until golden brown. 11. Prepare the icing. 12. Rice flour (100g) Spelt flour (90g) Macro Mike salted vanilla protein powder (40g) Baking powder (1tsp) Lakanto Icing sugar (80g) Water (20ml) Method: 1. Preheat oven to 160 degrees celsius and line a tray with baking paper. 2. Add the butter and maple syrup to a small bowl and melt in the microwave for 30-40secs. Stir until butter is completely melted. Add the coconut sugar and mix together until dissolved. 3. In a medium bowl add the rice flour, spelt flour, protein powder and baking powder and mix together. Add the butter mixture to the bowl of dry ingredients and mix together until a soft dough forms. 4. Divide the dough into desired size balls, flatten into a cookie and bake for 15mins or until golden. 5. While the biscuits cool, mix together the water and icing sugar until a smooth mixture that is thin enough to drizzle forms. Cook pasta according to the package directions until al dente, drain and set aside. 3. Drain broccoli, reserving half a cup of the cooking water. Preheat oven to 170 degrees and line 2 baking trays with baking paper. 2. In a bowl mix together melted coconut oil, coconut sugar, almond milk, vanilla extract and sea salt and mix till combined. 3. Mix through remaining dry ingredients. 4. Grab a tbsp of mixture and roll into a ball in your hands before placing on baking tray and pressing slightly flat. 5. Bake for 10 minutes. 6. Allow to cool and prepare choc top and pink icing. 7. Pink icing - mix together ingredients in a bowl till smooth besides from freeze dried raspberries and hemp seeds. Choc top - melt choc in microwave. 8. Pour half choc over half of the cookies and half pink icing over the other half. 9. Sprinkle with freeze dried raspberries and hemp seeds. Melt the coconut oil in a small sauce pan over medium heat. Then add everything else besides the pecans & protein/oats.
