17.01.2022 Lunch Kebabs Putting any food on a skewer instantly makes it cool in our house! This idea lends itself to almost whatever you have in your fridge, chunks of apple, cheese, chicken, avocado. This recipe doubles as a meatball recipe as well. If you’re cooking meatballs in a red sauce for dinner, leave half a dozen out of the sauce to heat up for lunch kebabs the next day. Preparation time: 20 minutes... Cooking time: 20 minutes Makes: 10 Ingredients For the meatballs (This will make 30-35 meatballs, add to a red sauce and pasta for dinner!) 2 1/2 cups (175g) fresh breadcrumbs 1 1/2 cups (375ml) milk 1kg lean beef mince 2 eggs, lightly beaten 1/4 cup (20g) finely grated parmesan 1/2 cup chopped flat-leaf parsley, plus extra to serve 1 onion, grated 2 leaves silverbeet, finely chopped 3 garlic cloves, finely chopped 3 tsp ground cumin Salt Pepper Olive oil For the rest of the kebabs 1 red capsicum, cut into 2x2 cm squares 1 green capsicum, cut into 2x2 cm squares 10 cherry tomatoes, cut in half Method Preheat oven to 180 degrees Celsius Step 1 Place the breadcrumbs and milk in a bowl and stand for 5 minutes or until the milk is absorbed. Transfer to a large bowl with mince, eggs, parmesan, parsley, onion, silverbeet, garlic, cumin, and pinch of salt. Season with pepper and stir well to combine, then roll mixture into 32 meatballs. Place flour on large plate and lightly season, then roll the meatballs in the flour, dusting off any excess. Chill for 15 minutes to firm up. Step 2 Heat oil in a large deep frypan over medium-low heat. In batches, cook the meatballs, turning, for 5-6 minutes until browned all over. Transfer to a large baking tray and bake for 15-20 minutes until cooked through. Step 3 Assemble the skewers by threading a piece of capsicum, meatball and tomato alternatively onto the skewer.

Tasmanians aged from six weeks to under 21 who live, work, study or spend significant periods of time in suburbs from Lenah Valley to Granton are able to attend this weekend’s clinic at the DEC. 08.01.2022 During his cooking demonstration today Ben cooked a salmon dish that included brussel sprouts thinly sliced with a mandolin slicer. I'm not a great fan of brussel sprouts but this was delicious thanks Ben.

07.01.2022 Paper-Baked Lemongrass Chicken Prep time 10 minutes Cook time 20 minutes... Serves 2 Ingredients 2 Nichols chicken breasts, butterflied 1 capsicum, sliced 1 bunch pak choy bunch Coriander 1 lemongrass stick, cut lengthways For the dressing; tsp Sesame oil 3cm knob fresh ginger, thinly sliced Juice of 1 Lime 1 tsp dried chilli flakes 1 lime leaf, sliced into batons Method Step 1 To make the dressing, combine sesame oil, ginger, lime juice, chilli flakes and lemon oil in a bowl. Step 2 Coat chicken breasts in the dressing, place onto foil lined with baking paper (so that the chicken is sitting on top of the baking paper). Top with capsicum, pak choy, coriander, lemongrass, 2 lime leaves, pinch of salt, lemon oil and remaining dressing. Place another piece of baking paper and foil over the top and crimp the edges closed. Step 3 Place parcel into a pan over medium heat and cook for 15 to 20 minutes.
