21.01.2022 Cook something different to fight boredom and bring joy to your day, food always makes us happy. So why not try something a little different, cheap and easy to make. So lets make a 'Shakshuka' great for breakfast, lunch or dinner.......delicious!!!!! INGREDIENTS 1 medium onion, diced... 1 red capsicum, seeded and diced 4 garlic cloves, finely chopped 2 tsp paprika 1 tsp cumin 1/4 tsp chili powder 2 cans whole peeled tomatoes 6 large eggs salt and pepper, to taste 1 small bunch fresh parsley, chopped INSTRUCTIONS 1. Heat olive oil in a large sauté pan on medium heat. Add the capsicum and onion and cook for 5 minutes or until the onion becomes translucent. 2. Add garlic and spices and cook an additional minute. 3. Pour the cans of tomatoes and juice into the pan and break down the tomatoes using a large spoon. Season with salt and pepper and bring the sauce to a simmer. 4. Use your large spoon to make small wells in the sauce and crack the eggs into each well. 5. Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking. 6. Garnish with chopped parsley

21.01.2022 COME JOIN GOONDIWINDI LIONS FOR A PICNIC IN THE TOWN PARK With the ongoing dry conditions and prospect of further Fire bans in QLD and NSW Lions have decided to... not proceed with it’s traditional Xmas Eve Fireworks at Riddles Oval. The club with the generous support of the Vern Kleinschmidt Community Trust, Brisbane based entertainment Red Rocket 3 have been engaged to entertain the children and provide community Christmas carols The club will be hosting a picnic in the Town Park, the original location of the Fireworks event when hosted by local businesses houses back in 1948. Finish your Xmas shopping, grab a bit to eat in town or wander down to the Town Park to join in the fun with your picnic. The event will be conducted in a slightly different format with people invited to bring their own picnic or purchase food from Smithies Mobile Bakery, Lions Hot Chip & Dagwood dogs, ice cream van, coffee van and other local food businesses. A bar will operate for people to buy drinks. Please minimise the amount of glass. Evening program (6pm 8pm) 5.30pm Join the Picnic in the Park 6.00pm Red Rocket 3 first session for the children 6.45pm Santa will make an appearance and provide lollies for the Children Callandoon Street 7.15pm Red Rocket 3 will do a further 45 minutes session of Xmas Carols and general songs 8.00pm Red Rocket will blast off back to Brisbane after a quick visit to Goondiwindi. What else will be available in the park Rotary Club Goondiwindi QLD Bozo Bus, jumping castles, face painting and Lions Glowies. Come join the party and relax in the Park with family and friends. All donations collected on the night will go to drought and bush fire aid programs. Lions working with E & E Waste will also have container refund bins in the park and containers deposited in these bins will assist Lions in donations towards community groups. Members & Families of the Goondiwindi Lions Club Inc wish all a Happy and Merry Festive Season and hopefully an improved 2020 Inland Rail Graeme Scheu

03.01.2022 Lap of Australia Day 331 to 334: We doubled back into Queensland and were looking for our path into country NSW and we found Goondiwindi on the map. After r...esearching what there was to do, we had to go for it! Goondiwindi is home to Goondiwindi Cotton Tours, so we organised a tour to learn all about the cotton industry. We visited the farm, learnt the farming process, how cotton is manufactured into twine and ultimately how Goondiwindi Cotton make their clothing range from local product with predominantly local services. We were fortunate to meet Sam the owner, who had time to join us for a damper morning tea and share some his story and some history of the region. He started with a farm for sheep, and after nearly going broke turned it into a thriving cotton farming and clothing business employing so many locals. We had so much fun we joined the art tour the next day, Jade taking us around the town's many art installations. A particular highlight was seeing Bowen Lane and meeting Angus who is on the Landscape Committee responsible for Bowen Lane and creator of so many of the major art installations around town. We met him as he was finishing off a brand new piece about to go up near the river, very fortunate timing. We stayed at the Goondiwindi Holiday Park which was heaven for the kids. They had a stunning pool and spa which they played in for hours. It is central to town so a great base. We visited the old Customs House and the Gunsynd Museum at the info centre. Gunsynd is massive out this way, a champion race horse from the 70's bought this community a lot of joy which still can be seen around today with many streets, hotels and shops named after it. Just out of Goondiwindi is Yelarbon, home of the local Art Silo depicting when the drought breaks. A great image and learning experience for the boys. We also called in to the Coolmunda Organic Olives farm to learn more about olive farming in the region, plus get to taste some of the local product. We hadn't planned to head this route, but we are so glad we did. Such friendly welcoming people out in the country, we couldn't wait to cross the border and say hello to NSW.
