25.01.2022 Healthy Green Jalapeno Guacamole 2 large ripe avocados 3 tablespoons GREEN JALAPENO CHILLI SAUCE 2 tablespoons chopped coriander... 4 green onions, finely sliced 1 fresh green jalapeno chilli, finely minced (optional) salt 230g NATURAL TOASTED CORNCHIPS Cooking Instructions Cut the avocados in half. Remove pulp and mash roughly in a bowl. Add remaining ingredients, stirring gently. Salt to taste. Serve immediately with oven-warmed corn chips. MAKES about 1 cups To make in advance, spread a thin layer of sour cream over top of guacamole. Cover tightly with cling film and refrigerate. Gently stir to incorporate sour cream just before serving. Additions to the mashed avocado can include any of the following: a de-seeded, chopped tomato, minced garlic, minced red onion, minced pickled chillies, diced red, yellow or green capsicum, diced carrot, corn kernels and chopped black or green olives. To make a creamy dressing, mix guacamole with mayonnaise, sour cream or plain yogurt and thin to desired consistency with milk. For a tangy dressing, thin guacamole with lemon or lime juice and a good splash of olive oil. Guacamole is also a delicious dip for raw vegetables such as sliced capsicum, baby corn, carrot and celery sticks, cucumbers, radishes, snow peas, sugar snap peas and zucchini. Guacamole can be served as a filling for a cheese omelette with a drizzle of salsa or chilli sauce on top. Also try as a filling for flat bread or tortilla wrap salad sandwiches.

This tropical hottie is inspired by the fruity and spicy Carribean hot sauces popular all over the world. --------------------... Ingredients Water, Habanero chillies (17%),Carrot, Onion, Cider Vinegar, Mango, Vinegar, Sugar, Salt, Lemon & Garlic. -------------------- Pour A perfect pouring thickness, neither too thin or too thick, in fact just right. It has a finely blended texture, however some tiny bits of chilli, seeds and other ingredients are visible in the appetising orangey-red coloured sauce. -------------------- Aroma You can tell when a hot sauce is gonna be hot as it has that familiar gnarly Habanero aroma combined with strong vinegar and some garlic in the background. Can't really pick up any of the other ingredients as they take a back seat to the fiery Habanero and vinegar aromas. --------------------- Taste This sauce is very Habanero pepper forward in it's flavour with a strong vinegar presence and some saltiness, onion and garlic noticeable in the savoury flavour department. The carrot, mango and lemon flavours are very subtle as is expected from a seriously hot sauce. --------------------- Verdict A quality hot sauce full of big heat and flavour guaranteed to please any hot sauce fans. 23.01.2022 Had to share this perfect dish for a Wednesday night from @quiltjane I cooked my sister’s ‘use the vegetables in the fridge’ bake. This yummy dish is made using fennel, eggplant, red and yellow capsicum, zucchini, beetroot, pumpkin, leek, sweet potato. 02.01.2022 Not sure what to cook on a Monday Night, we love this Mexican/Italian variation on a canneloni. Always a hit in our household when Lynne cooks it. Our new Tomato Pesto Salsa is perfect to simply add to spice it up! Here is the recipe.... Mexican Cannelloni Filling 1 onion, finely chopped 1 clove garlic, minced 2 tablespoons butter 250g ricotta cheese 2 egg yolks 2 chicken breasts, poached and cubed 3 seasoned chicken sausages, casing removed 2 tablespoons olive oil 1 teaspoon salt teaspoon nutmeg 1 jalapeno chilli, minced Sauce 60g butter 1 tablespoons flour 1 cup milk 1 cups chicken stock cup Pesto Tomato Salsa 8 large flour tortillas 750g sliced mozzarella cheese Directions For the filling, melt the butter over low heat in a frying pan and add onion and garlic. Cook until softened, transfer to a bowl and set aside. In the same pan, heat the olive oil. Crumble sausage meat and add to the oil, cooking over medium heat until cooked through but not browned. In a food processor, place onion/garlic mixture, ricotta cheese, egg yolks, chicken, sausage, salt, nutmeg and chilli. Process until smoothly blended. Transfer to a bowl and refrigerate until ready to use. To make the sauce, melt butter in a saucepan and whisk in the flour to make a paste. Cook and stir for 1 minute, then gradually add milk and stock. Continue to whisk sauce while cooking over medium heat. When thickened, turn off the heat and stir in the Pesto Tomato Salsa. Spread a thin layer of sauce in the bottom of a baking dish. To assemble cannelloni, place 1 flour tortilla on a plate, spoon 1/8 of the filling down the centre and roll to enclose. Set the filled cannelloni seam side down in the baking dish. Repeat with the remaining tortillas and filling. Spoon remaining sauce over the top of the cannelloni and place slices of mozzarella cheese over each one. Bake uncovered at 190 degrees for 20 minutes or until sauce bubbles and cheese is melted and browned. Serve with additional Pesto Tomato Salsa on the side. Serves 4-8

01.01.2022 Love a crunch and some healthy veggies for the weekend, then whip up this easy spicy crunchy Noodle salad. Stir through our FIERY COCONUT CHILLI sauce 1 packet rice sticks (fine rice noodles)... Approximately 3 cups vegetable oil shredded lettuce shredded green and red cabbage bean sprouts sliced spring onions coarsely chopped coriander coarsely chopped mint shredded carrots sliced snow peas sliced fresh chillies toasted almonds toasted macadamias shredded chicken cooked prawns seasoned tofu strips shredded carrots Dressing 2 teaspoons mild mustard 1 tablespoon soy sauce 2 tablespoons sesame oil cup macadamia oil (or vegetable oil) 6 tablespoons rice wine vinegar cup BYRON BAY CHILLI COMPANY FIERY COCONUT CHILLI SAUCE Pour vegetable oil into a deep pot or wok and heat. Break rice sticks into 10cm lengths and fry in hot oil until crisp. Turn noodles over and cook both sides until crispthis will take a matter of seconds. Remove all noodles with a slotted spoon and drain on kitchen paper. You will only need to fry half the packet. To make the salad, choose from the list of ingredients and toss in a large bowl. To make the dressing, combine all the ingredients and pour into a pitcher. Add crispy noodles just before serving, saving some to garnish the top of the salad. Pour dressing over each serving. MAKES serves 4-6
