Let's see - there's one vehicle for the kids stacked with swimming tyres, push bikes, buckets for yabbying, nets for yabbying, fishing rods, board games, glow in the dark baseball, books on camping and comfy pillows for those tired noggins at night! 15.01.2022 Here's another recipe that will go well with your damper -minus the golden syrup of course! Balanced nutritious and really yummy for a lunch or dinner. CAMPFIRE STROGANOFF.. INGREDIENTS 500g good quality beef (traditionally beef - but can be used with chicken and pork) 1/2 an onion... 2 cloves of garlic 2-3 stalks of spring onion A handful of mushrooms 2 small roma tomatoes 2 small sprigs of rosemary 1 small handful of chopped coriander or parsley 2 generous tbsp of dijon mustard 1/2 stubby of beer 1 cup of milk (or cream) 2 tbsp olive oil juice of half a lemon (or 1 tbsp of concentrated lemon juice) 1 generous tablespoon ghee (clarified butter) METHOD: Roughly chop your onions, garlic and mushroom. Roughly chop your spring onion and tomatoes. Place into your pot. Traditionally stroganoff is a beef dish, but you can easily substitute with chicken or pork. If you were to substitute cream in this recipe for the milk to achieve a richer flavour, I'd recommend using beef as the combination of pork and cream can be quite rich. Chicken and cream, perfect! Add your roughly sliced beef (pieces were about 1.5-2.5cm chunks, keeping them not quite uniform to maintain some rustic quality to the dish), rosemary, and mustard. Add milk (or cream), lemon juice and beer. The beer used in this example is Coopers Sparkling Ale lagers are recommended for their hoppy flavour (one for you, one for the pot).. Keep covered, return to stir every 10-15 minutes. Ensure that there's a decent amount of liquid in the pot - you should be able to see the various ingredients during the cooking process, if you can't, then you're using too much liquid. The taste of stroganoff should be creamy and mustardy - the tomato is simply to add tang and color, but shouldn't be overpowering. The rosemary should add some sweetness to the scent and depth in the flavor. I personally like having my stroganoff on the peppery side of things. Don't ever skimp on the seasonings. When the sauce is reduced by about 1/3rd (should take about 30-40 minutes depending on your fire) - place your cover half on the pot until liquid reduces to about half of the original volume. Add ghee and season to taste. If you haven't made any damper, serve with crusty bread for a yumm meal with that rustic flavour, and most importantly, made with love! And leftovers just get better with flavor. Serves 3-4 so just double for a bigger crew.. See more
14.01.2022 KIDS AND CAMPING ARE A GREAT MATCH especially when the kids are happily occupied! Here’s a few fun activities for your kids and their Easter outdoors adventure and you’ll probably love them just as much as the munchkins EYE-SPY ADVENTURE SCAVENGER HUNT Organize a group of kids and buddy everyone off. Every team gets a list of items to gather and a bag to put the them in; good idea to give the kids a compass and watch (with good instructions); and a big bag of roasting m...arshmallows waiting for the winners! CLOUD INSPECTING Here’s an image you can print out for each of the kids with a cut-out in the centre of the page. It’s as simple as the kids being out in the open, capturing the clouds in the sky in the cut out section and then determining which type they are. Educational, active and fun! CAMP OLYMPICS...Easy to organise with some markers and ropes and could be relay races; long jump; tunnel ball; tug of war; hop scotch; balancing in tree poses; and skipping stones on the creek CAMP STORY CONTEST Individual story telling for kids around the campfire is a real stimulant to their imagination as well as making them (in turns), the centre of attention! Alternately, a game where one of the kids begins a fictional story with a time limit, then in turn, all of the kids have to continue on with the story.. best story judged by a vote of applause at the end! STARS AND CONSTELLATIONS another educational and fun activity is to look at the night skies which are stunningly clear at Gordon Country and determine the individual stars and the constellations. Maybe take a book with you that the kids can refer to. RAINY DAY EXPLORING and it might rain a little so best to be prepared and make the most of it. Let’s face it kids naturally love playing in the rain (it’s only water after all)! A rain coat and good wet weather hat, gumboots maybe some extra socks and off you go exploring through the rainforest jumping puddles and seeing what the flora and fauna look like when they’re all wet! CAMP COOKING. Here’s a great recipe that the kids can manage with supervision. Probably a bit of a sugar overload but hey, it’s Easter and there’s chocolate chocolate and more chocolate! You'll need- * sugar cones * mini marshmallows * chocolate chips Yummy extras... * peanut butter * chopped bananas * anything else you think you'd like (fruits, nuts, etc.) Supplies: * aluminum foil * a campfire or grill Spread the peanut butter on the inside of the cones, then fill with the chocolate chips, mini marshmallows and banana slices. Wrap the whole cone in aluminum foil and put on the hot grill. Grill for about 5-10 minutes, turning occasionally. Absolute yummmmmm and the kids so proud of their efforts! See more

Terrific match with James Duckworth who played so well and has a very bright future. Lleyton is so proudly Australian he is almost iconic these days.
