13.01.2022 Also known as Field Mustard and part of the Brassica family. There are many varieties of Rapa including, Broccoli, Choy Sum and Turnip. Usually characterised by little yellow or white flowers and miniature Broccoli like florets and green serrated leaves. Rapa has a slightly bitter taste like Chicory and is most commonly enjoyed simply blanched and drizzled in olive oil, sea salt and black pepper.

Part of the same family as Pumpkin and Zucchini, Squash are tender and versatile. Blanched and tossed through seasoned butter, roasted with garlic cloves and olive oil or simply thinly wedged and pickled. Squash add a great splash of colour to any vegetable mix.

03.01.2022 A member of the Brassica, Mustard Family, Horseradish has a pungent smell and a spicy flavour. Freshly grated, it is used as a flavouring in Mayonnaise based sauces, Cocktails such as Bloody Marys and more widely served with sour cream as an accompaniment to a Rib Roast with Jus. The root can be grated and mixed with a little vinegar to increase its shelf life.

02.01.2022 Radicchio is a perennial cultivated form of chicory leaf, sometimes known as Italian chicory because it is commonly used in Italian cuisine. It has a bitter and spicy taste, which mellows if it is grilled or roasted.

02.01.2022 Discovered in 2010 by fruit pickers on the Nardi boys farm in Leeton when the pickers spotted a few oranges with chocolate brown tinged skin. The original crop was marketed to China where it was very well received and so more plants were seeded and we are now reaping the rewards. This orange has a depth in flavour with sweetness and a touch of acidity. The skin is great for Marmalade and dehydrated a great powder to sprinkle on desserts and salads.

01.01.2022 Known a s a Mandarin but also classified as a Tangerine. This fruit is a hybrid of an Orange and Mandarin. It is easy peel with large segments. Distinctive in taste and look with its bump or bun protruding from the top of the fruit. The skin is super fragrant and makes excellent zest.
