08.01.2022 Made a Golden Gaytime inspired mousse cake for the bushfire fundraiser held today at my work. Malt crumb base, sponge cake, vanilla bean cremeux, Valrhona Dulcey mousse and milk chocolate glaze. Topped with some Caramello koalas and Caramilk Twirl. Caramel much?



01.01.2022 Made this mousse cake inspired by the Hummingbird cake for Mum's birthday. Hummingbird base (coconut, pineapple, banana), white chocolate coconut crunch layer, pineapple cream and cream cheese mousse. Topped with cinnamon and coconut meringue kisses. I may have made one too many cakes though!
