19.01.2022 #balmynights New Releases Now Available... 2020 ‘White’ - Hunter Valley, NSW Certified organic & handpicked Schonberger from the Ablington Vineyard. Wholebunch pressed to neutral French puncheons for wild primary & natural malolactic fermentation, without adjustment nor correction. Unfined and unfiltered. Minimal SO2 at closure.... 2019 ‘Oo-yeh’ - Hunter Valley, NSW An ode to the complex & nuanced wines of the Jura. Ouille wines (otherwise pronounced ‘Oo-yeh’) see their vessels kept full to retain freshness & vigor, while still exhibiting a faint fino-tang. Certified organic & handpicked Chardonnay from the Ablington Vineyard. Macerated on skins for 7 days before it was pressed & wild fermented in a Nomblot concrete egg. Bottled after 4 months on solids, unfiltered & zero additions. 2019 ‘Tropicana’ - Hunter Valley, NSW Certified organic and handpicked Verdelho from the Ablington Vineyard. Skin fermented for 18 months in a Nomblot concrete egg. Foot trodden and basket pressed to tank to settle. Bottled unfiltered with zero additions. 2020 ‘Red’ - Hilltops, NSW Handpicked & destemmed Sangiovese from Hilltops, NSW. With a short and gentle maceration of 5 days on skins with punch downs occurring just once daily. Wild fermented and matured in old puncheons without adjustment nor correction. Unfined and unfiltered. Minimal SO2 at closure. #drinknatural #vinnature
16.01.2022 @fleet_wines ‘Macclesfield’ Chardonnay Handpicked Chardonnay from 20 year old vines from theCordillera Vineyard - Macclesfield, Yarra Valley on a mixture of red volcanic clay and grey loam soils. Wholebunch pressed to stainless steel for wild primary fermentation & settling before it was racked to neutral puncheons where full natural malolactic fermentation occurred, followed by occasionalbattonage. The resulting wine remainedon solids for 12 months before it was bottled..., unfined & unfiltered. Minimal sulpur added at bottling. "This has so much going for it. Delicious, is the first thing, but complexity, interest and vitality too. Steely core of minerally acidity, green apple, crackle of lime, slate shot through the whole thing. Mouth-watering and succulent, exceptional length and character. Feels of a cold place and restrained but punching out grape flavour. The resulting wine remainedon solids for 12 months before it was bottled, unfined & unfiltered. Minimal sulpur added at bottling.
