20.01.2022 Are you a fan of peated whisky? Our Limeburners peated whiskies use peat hand collected from the unique region in the South West of Western Australia, known as the ‘Valley of the Giants’. The peat collected from here is distinctively Australian, due to the rare and majestic 400-year-old red tingle trees that are native to this area. The peat has a native Australian botanical composition, giving the whisky a flavour profile like nowhere else. If you have not walked with the ‘Giants’, be sure to make it a part of your next memorable visit in the South West. We made a decision to restrict entry to children under 16 into the distillery and wearing enclosed footwear is now a requirement. ... 06.01.2022 Our latest Limeburners Whisky Directors Cut release is something special. Each Directors Cut release is a single barrel that is carefully selected by our Master Distiller Cameron Syme. This release, Cameron has selected a ruby red Peated Port Whisky.... The malted barley in this whisky has been smoked using locally sourced peat from the ‘Valley of the Giants’. It has been aged in an American oak ex-bourbon barrels before being finished in Port casks for an elegant and complex result. This delicate process has left the liquid smelling of raisin, sticky date pudding, creme brulee and hints of cherry, with charred maple syrup on the palate.
