21.01.2022 Beans, glorious fresh beans! Bush beans produce really well and are easy to grow, don't need a trellis. Don't over water, just enough to keep moist. Plant in good compost but don't over do manure. Don't have to do anything else with them except pick and eat. No food miles here.

20.01.2022 Apricots so delicious, but what to do with 600 of them all at once, besides sharing and eating them? Used dehydrator to dry lots, some were stewed and frozen to eat later and also made a delicious apricot crumble for the week.

20.01.2022 In light of everything that is happening more are looking towards sustaining themselves. This is such a positive from all the negative. Those wishing to grow veggies or produce their own fruit and are struggling with aspects of it, even if it is just the basic principles or planning stage, I would like to offer the benefit of my many years of personal experience for free. 19.01.2022 Nice haul from our sweet potato crop: Make Mung bean & sweet potato patties. INGREDIENTS 1 cup of sprouted Mung Beans... vegetables of choice plus some greens small cooked sweet potato 1-2 teaspoons cumin seeds spices 1 tablespoons Tahini 3 teaspoons potato or tapioca starch (optional) Salt to taste PREPARATION 1. In a food processor, add all the ingredients mentioned above (except tapioca starch) and grind this into a coarse texture. 2. Mix this coarse mixture with tapioca starch to form patties. 3. Once you form all the balls keep them in the refrigerator for about 30-40 minutes to set and firm up. 4. Place the flattened patties in a fry pan with olive oil after rolling them in amaranth flour and cook them on a low-medium heat. Flip them after 5 minutes to cook on the other side.

18.01.2022 SPAGHETTI SQUASH - What can you do with them when you have so many from summer crops? Well they can be stored for 13 months or may be even longer, as I eventually ate the last one after the next years crop was ready to eat again. I was afraid to cut into another one, when I had been eating them for a year!! I have now found something yummy to do with them.... Made VEGAN SPAGHETTI SQUASH FRITTERS which surprisingly were tasty. The best part is 90% of the meal came from my ga...rden. So fresh, tasty, spray free and zero food miles. Cook spaghetti squash first and scrap off the skin and let cool. Mix in chopped herbs Grated radish (optional ---chives or leaks gently fried first) Grated small purple potato Rolled oats Tapioca flour (or other light binding flour) Salt & spices of choice Mix altogether and let sit in fridge for an hour or more. Fry in pan for a few minutes each side. Can serve with salad, sprouts, & dressing and steamed vegies. Dressing is made from tahini, lime zest, lime juice, coconut yoghurt and avocado oil.



16.01.2022 Pineapple sage; a wonderful edible plant. Can use leaves for a herb tea or edible cut up and added to a salad. Autumn it flowers and they are delightfully edible. Beautiful in salads. Grows like mint so needs to be contained.

15.01.2022 Our strawberries have done so well to feed us for 3 months with fruit every day. Very grateful. Made a terrific sugar free/preservative free strawberry jam with ......... strawberries, chia seed and lime. Anyone wanting strawberry runners later on in the year let me know and I will tell you when they are ready to collect.

13.01.2022 I have 4 pepper bushes which have been producing masses of peppers this year, loss count after 60. Red ones are sweet and mild, but can eat the green ones too. Eat raw or cooked. Looks like tea will be with peppers and eggplant again. Last time we stuffed the peppers with rice, cooked spaghetti squash, mash potato and spices.

10.01.2022 No waste; From fresh Lemonade fruit to dried fruit to eat another day. Slice thinly with skin on and dry at low temperature (70 degrees) in air dryer.

10.01.2022 What to do with radish leaves? When picking my radish I also use the leaves and stalks to make a vegetable broth and can add a few other excess veggies from the garden into it too. From there I can use the broth to make MILLET FINGERS which also has sweet potatoes in. The sweet potatoes are in season now. Soak 1/2 cup of millet overnight then pour off the water before adding to a saucepan Add 2 cups of water or vegetable stock to saucepan and cook millet for 15 mins Add ...1 small sweet potato, 2 teaspoons of chia and choice of spices or herbs, salt and cook a further 15 mins until sweet potato is soft; May need to add a little more water and keep an eye on so it does not stick to the bottom. When cooked with no water left let cool slightly Mash together Add cup of feta or 3 tablespoons of coconut yoghurt and stir into mix Place onto a grease lined dish and flatten out with spatula. Place in fridge for a couple of hours or overnight. Cut into fingers and fry in olive oil for approx 2 mins on the 4 sides. Serve with steamed veggies or a salad. See more

07.01.2022 So important to have water out for our bees as well as the birds. They are all finding it very hot. Masses of bees flocking to water. A white browed scrub wren with wings and beak open, trying to cope in the heat

07.01.2022 What if in 2021 we all focused on mother earth and being grateful for everything that this wonderful planet has to offer. Let’s just be amazed and awed! From a tiny seed we can grow into something delicious and edible to feed our bodies, to the amazing wildlife and flora that is so unique to each area, to the landscape of such diversity, right out to the sun and moon that gives this planet life. To live in the moment and be mindful of what we are doing and seeing, taking time... to just notice all the little things that we would normally rush by. Fill our day with what is positive and what we are grateful for rather than the drama of the moment for that is not reality. Just look out and up and see how big and powerful our mother earth is, that is reality, everything else is just a blip, so why focus on it. It is time to take care of our Mother Earth she has cared for us, now it is time to care of her. Give our love and gratitude and notice what we are doing to it. Be mindful of everything that can be destructive to her, just stop and think of a better way. We don’t need to wait for the Government to make a law on taking care of the environment, we as individuals can each make better choices, however small this may seem, which together will lead to a mass change. Bring on love, gratitude and caring for our Mother Earth. This has so many spin off’s for ourselves and our connection to others. 2021; it’s time to change! See more

02.01.2022 Growing bush beans is easy and no fuss with heaps of beans over the summer period to eat.Beans don't like lots of nitrogen in the soil. Basically plant the seed in compost enhanced soil and then wait, give regular water when plant starts to grow, but not too much. Once the plant starts to flower the beans produce quite quickly afterwards. Pick, nip off the ends, no need to string them and steam for 10 minutes. Can chop up and add some fresh basil and a little avocado oil to add on top. So tasty, so fresh and no food miles other than walking to the vegie garden. No comparison to frozen beans from the shop!

01.01.2022 Turmeric; Just dug mine up, which had come up from a small shoot left in the ground last year. I got 2 ice cream containers that were over flowing from my garden. Grows very much like ginger, though haven't been successful with that here due to the frosts, but the turmeric seems to be fine. Cleaned the rhizomes up and put on disposable gloves and sliced them into small pieces to put in the freezer, ready to used when ever I want them. I love making tea out of a slice. Looks like I have enough for a year or two.
