20.01.2022 Blueberry Balsamic Glazed Rosemary Chicken INGREDIENTS for 4 to 6 servings 2 Tablespoons extra virgin olive oil, divided 2 Tablespoons unsalted butter, divided... 1 Tsp. salt 170g Blueberries 1/2 cup balsamic vinegar 1/3 cup maple syrup 1 Tbsp. coarsely chopped fresh rosemary 4-6 skinless, boneless chicken breasts 2 shallots, thinly sliced 1/2 Tsp. pepper, divided PREPARATION Preheat oven to 180C & Preheat a large, heavy, nonreactive skillet. Season chicken with 1/2 teaspoon salt & 1/4 teaspoon pepper. Add 1 Tbs olive oil, 1 Tbs butter & chicken to pan when oil & butter are hot & bubbly. Sear chicken on med-high heat approx 1min per side or until golden brown & light crust forms. Transfer chicken to a baking dish and set aside. Reheat skillet and add remaining olive oil and remaining butter. Stir in 2 shallots for about 4 minutes or until soft and lightly caramelized. Add blueberries and COOK 1 minute. Add 1/2 cup vinegar, 1/3 cup maple syrup, 1 Tbs rosemary, remaining salt, and remaining pepper. . STIR, COMBINE & SIMMER for approx 10mins until blueberries have collapsed. Pour blueberry mixture over chicken. Bake about 10 minutes or until chicken has cooked through to a temperature of 75C. 01.01.2022 Tomato & Parmesan Pie is a delicious weekend recipe. PREP TIME-10 mins COOKING TIME- 30 Mins INGREDIENTS 1 sheet Puff Pastry 2 tbsp Seeded Mustard... 30g Parmesan Cheese, shaved or shredded plus extra to serve 400g mixed Baby Tomatoes, halved Handful of fresh Thyme Leaves, stems removed 1 tbsp Butter, melted 1 tbsp Olive Oil Cracked Black Pepper to taste Handful of Baby Basil leaves PREPARATION - Preheat oven to 200C. Place pastry sheet on a lined baking tray. Spread mustard evenly over the surface, leaving a 4cm border around the pastry. Sprinkle Parmesan Cheese then top with tomatoes and thyme. - Lift and fold the 4cm border of pastry to contain ingredients. Brush border with melted butter. Drizzle tomatoes with olive oil and a sprinkle of black pepper. - Bake for 25 minutes or until pastry is golden. - Place pie on a serving platter. Top with basil leaves and extra Mil Lel Parmesan Cheese.
