24.01.2022 As I chop the array of different veggies for tonight's dinner I cant help to think what it would be like to eat just carrots for 3 months straight. Soil for the most part is a living thing with micro organisms who like us do best from a varied diet yet for months on end they are dished up the same meal. You can just imagine the little critters whining, "not wheat again!". The #covercrops we are planting contain a wide variety of plant species including peas, Rye corn, oats, fodder rape, tiller raddish and wheat mixed all in the one crop. This smorgasbord will not only offer our grazing pigs a variety of choice to feed on above the ground but also the microbes below. #healthysoil #healthypigs #nochemicals

01.01.2022 Wow, how to undersell pork... I think this poster came from the 60's. Where are the rump roasts and silverside roasts, the hocks for braising, the, oyster blade roasts, rib eyes, scotch steaks and roasts, gammon steaks, schnitzels or escalopes and flank? And wheres the crackle? Jowls, ears, tails, trotters. The classic spanish cuts of presa, pluma and secreto. And pork bone marrow is fantastic. Pork is not difficult to cook you just need to select from reliable sources, know where your pork comes from and make sure it has fat. Im pretty sure the San Pellegrino chefs arent selecting lean pork when they cook.
