19.01.2022 For those who like to Tart up their Greg's Tender Joint Home Made Free Range Ham. Made from the very very best St Bernard Free Range Pork #stbernardsfreerange Honey Mustard Glazed Ham... INGREDIENTS . 100g (1/2 cup, firmly packed) brown sugar 80ml (1/3 cup) maple syrup or any othernflavour combination Jam/Marmalade/Conserve of your choice 80ml (1/3 cup) Australian Dark Honey . . 1 tablespoon Hot English Mustard 1x Greg's Tender Joint Christmas Ham Whole cloves, Glazed Cherries & slices of Orange to stud . METHOD . Step 1 Stir the sugar, maple syrup, honey and mustard in a bowl until the sugar dissolves. . Step 2 Preheat oven to 160C. Line a large baking dish with 2 layers of non-stick baking paper. Place an oven shelf in the lowest position. Remove all other shelves. Use a sharp knife to cut around the shank of the ham, about 10cm from the end. Run your thumb nail under the rind around edge of ham. Gently lift the rind off in 1 piece by running your fingers between the rind and the fat. Score the fat in a diamond pattern, about 5mm deep. Stud the centres of the diamonds with cloves & Cherries with a band of sliced Orange down the middle. Transfer to prepared dish. Step 3 Brush one-third of the glaze over the ham. Bake, brushing with glaze every 15 minutes, for 2 hours. Increase heat to 180C for a further 15 - 20 mins. Remove from Oven and allow to cool befor Carving RECIPE NOTES Storage tip: To store follow instrucions on your St. Bernard Pork Ham Bag Or: For a different flavour, use fresh orange juice and 125ml (1/2 cup) Port with the other ingredients in a saucepan over low heat until combined. Pour into a jug. Glaze as previous instruction.

18.01.2022 Goat Tagine INGREDIENTS 2 pounds goat pieces, bone in... 2 teaspoons sweet paprika 2 teaspoons ground coriander 2 teaspoons ground cumin 1 teaspoons ground ginger 1 teaspoon chilli powder 1 teaspoon ground cinnamon 1 teaspoon white pepper teaspoon ground cardamom teaspoon allspice 2 teaspoons salt 2 teaspoons olive oil grated rind and juice of 2 lemons 1 cup chicken stock cup dried apricots cup golden raisins (I didn't use these) 1 cup thick, Greek-style yogurt cup pistachio kernels, roughly chopped couscous, to serve METHOD Combine spices and salt in a large bowl. Add oil, rind and half the juice of the lemons, stir to form a paste. Add goatmeat and stir until well-coated in paste. Cover and refrigerate 3 hours if time permits. Preheat oven to 325F. Place goat meat mixture into a casserole dish with a tight-fitting lid. Add stock and remaining lemon juice. Stir until well-combined. Cover and bake 1 hour. Stir in dried apricot and raisins. Cook, covered for a further 40 minutes or until meat is tender. Serve immediately with a dollop of yogurt, sprinkling of pistachio kernels and couscous on the side.

17.01.2022 Or you could try your hand at a yummy Warm Lamb Salad. Lamb Backstrap marinated in Olive Oil, Lemon Zest and Garlic. Pre heat to 180c Cook 10 to 12 minutes and rest with a squeeze of lemon juice. Serv over a Leafy Green Salad with sliced Black Olives Finley Diced Feta and rinced with your choice of Balsamic Dressing... Dang!!! I can smell this cooking now!!!

08.01.2022 The question of Beer Batter has arisen a few times this week. So... Here's my tried and true recipe and method for the best Beer Batter Ever... All you need is... 2 cups SR Flour 1 370ml Can/Stubby of Cold Beer... (maybe some xtra Beer... Don't forget the cook) Beer batter is not complicated, it should only contain beer and self-raising flour. The beer should be cold. You don't need to sift the flour and don't over-whisk it. A few lumps actually makes Batter Better (sorry). choose a beer that you like to drink. Like any ingredient, Beer ranges in texture and taste. Use Plain Flour as a Dredge then into your Batter and into your Oil. Chose an Oil with an high viscosity(veg oil works)... You can do your own Wedges in it, some Barra or Flake. If it wants Battering thus is your guy... Dinner done...
07.01.2022 Goat Curry... Not only tastes good.. It's a lean healthy option too Goat curry .... INGREDIENTS 5cm piece fresh ginger, peeled 6 large garlic cloves 1/4 cup fresh coriander 2 long fresh red chillies, coarsely chopped 2 tablespoons ghee 1 teaspoon Cumin Seeds 1/2 teaspoon black mustard seeds 1/2 teaspoon fenugreek seeds 1 small cinnamon stick 1/4 teaspoon ground cloves 1/2 teaspoon ground black pepper 3 stalks fresh curry leaves, leaves removed (approximately 40 leaves) 2 brown onions, finely chopped 1 1/2 tablespoon garam masala 3 teaspoons turmeric powder 1 large ripe tomato, finely chopped 70g (1/4 cup) plain yoghurt 1 teaspoon salt 1kg diced goat meat 250ml (1 cup) water 1 tablespoon malt vinegar Fresh coriander leaves, Processinger, garlic, coriander and chilli in a small processor until finely chopped. Heat the ghee in heavy-based saucepan over medium heat. Add the cumin, mustard, fenugreek and cinnamon. Cook, stirring, for 30 seconds or until aromatic. Add the cloves, pepper and curry leaves and stir for 20 seconds or until aromatic (be careful, as mixture will spit). Add onion. Cook, stirring for 3-4 minutes or until softened. Stir in the ginger mixture for 1 minute or until aromatic. Add garam masala and turmeric. Cook, stirring for 1-2 minutes or until aromatic. Add tomato and cook, stirring, for 2 minutes or until a coarse paste forms. Add yoghurt and salt and stir for 1 minute or until combined. Stir in goat. Cook, stirring occasionally, for 5 minutes. Cook, covered, stirring occasionally, for a further 10 minutes or until meat releases juices. Stir in the water Reduce heat to low. Cook, covered, stirring occasionally, for 1 hour 30 minutes. Stir in vinegar and season. Cook for a further 15-30 minutes, removing lid for the last 10 minutes to thicken sauce, or until goat is tender Sprinkle with coriander and chilli.

07.01.2022 Asian Chilli Garlic Prawns Juicy prawns in a sweet sticky, spicy, garlicky sauce. A quick dinner that tastes like a homemade Chilli Jam stir fry you get at modern Thai restaurant Spice level - this is quite spicy! Ingredients... 500g /Prawns, raw, peeled and deveined 1&1/2 tbsp vegetable oil 1 tsp sesame oil, toasted 1/2 Red Onion finely sliced 3 garlic cloves Grated 2 tsp ginger, grated 3 tbsp chilli Jam. I used a home made one... 1/2 cup (125 ml) water 3 tbsp Sriracha (Note 4) 2 tsp soy sauce, light or all purpose (Note 3 tbsp brown sugar (sub with white) Garnish with Sesame seeds Green onions, finely sliced Red chillies finely sliced or chopped Instructions 1. Heat oil in a large skillet over high heat. Add half the prawns and sear for about 45 seconds on each side until golden, then remove into bowl. Repeat. 2. Remove skillet from stove to cool down slightly, turn down to medium 3. Return skillet to stove, heat sesame oil. 4. Add Onion and stir-fry until translucent, add garlic, and ginger. Cook until garlic turns golden 5. Add water, then Sriracha, soy sauce and sugar, Stir and increase heat to medium high add the Chilli Jam and let it simmer for 3 minutes or until the sauce starts to thicken to a thin syrup consistency. 6. Return prawns into skillet and toss to coat in sauce and reheat, and cook for 1-2 minutes until sauce is reduced and coats the prawns nicely. 7. Garnish with sesame seeds, fresh chilli and shallots if desired.
