16.01.2022 This is Jamie. And this is his burger. A Crispy Bacon and Cheese, sub the Herb Mayo and add Sweet Chilli Mayo. Jamie, aka "Ja'mai" (pronounced as it looks), is Assistant Restaurant Manager of our Broadway restaurant. He thinks back to his sign-off day where all his hard work had paid off, giving him an amazing pathway to management and leadership, as well as some of his best friends and the people he loves working with.... When he's not servin' up yummy burgs, he's at the gym, chillin' with his mates, working on his music, racking up those plays on Spotify and listening "to only Justin Bieber". 16.01.2022 This is Josh. And this is his... HFC. JP, as he's known by the team, is the mastermind and the chef de cuisine behind our Healthy Fried Chicken. Another of our Support Office team who first cut their teeth in the restaurant, he's helped us open new restaurants in every state, run music festivals and sporting events and of course create new menu items that you know and love. So we thought we'd ask this head chook a few questions about his latest creation.... What's the key to creating that perfect fried chicken? "Eating a lot of it. But, apart from eating a lot of fried chicken and testing, I really wanted to keep the DNA of a Grill’d burger ("guilt-free") in the recipe and a real chicken taste that wasn’t masked by a lot of ingredients or fillers. I wanted to take the parts of what I love about fried chicken, but without the guilt. It's why we chose to use 100% Australian RSPCA Approved Chicken Breast and not just using any odd bits as some others do." When you’re not working, what are you doing? "Two kids keep me busy, but in my spare time, I like exploring Mornington for great wines and interesting food. I've been listening lately to Muddy Waters & John lee Hooker, James Blake, The Rolling Stones & really enjoy my podcasts, like Smartless, highly recommend." 12.01.2022 This is Patrick. And this is his burger. A Wagyu build with all the trimmings, even a few of our Australian grown jalapeos when feeling, and we quote, "dangerous". If youre not his mum, hes Pat. He manages our Glen Waverley restaurant, which, when asked to say a few words about, "has given me the opportunity to grow as a leader and connect with my team and my local community in a way Id never imagined! On top of this, getting to manage my restaurant in my own way."... As far as highlights go, hes had the chance to work at an a-bun-dance of different restaurants within a short space of time, allowing him to meet some pretty rad people. When hes not flippin burgs, this muso plays the guitar and piano, hits the gym and wears fun socks (with burgers on them, obvs), but most importantly has a good ol passion for great food. And cars. When shes not heading up our Eastland restaurant, she can be found at the dog park with her Lab and Dachshund. With the Melbourne lockdown, Sams taken to making face-masks galore, playing online games with her mates and drinking copious amounts of coffee something we can all relate to.... A veteran of many years and many restaurants, Sam describes her experience as one of "person and professional growth, as Ive been pushed outside of my comfort zone, allowing me to develop into who I am today." Shes also chalked up an abundance of lifelong friends along the way.
