The King of Rundle St is what he put on his Linkedin page, but while hes not got a crown on his head, he is the head bandana in the heart of Adelaides CBD. Josh loves his job for the ability to grow personally and professionally, having many new opportunities on his plate. "Working the Aus Open earlier this year before everything got flipped upside down.... Bringing the best of the best from around the country & making new friends. Yeah, that was pretty special!" 21.01.2022 This is Josh. And this is his... HFC. JP, as he's known by the team, is the mastermind and the chef de cuisine behind our Healthy Fried Chicken. Another of our Support Office team who first cut their teeth in the restaurant, he's helped us open new restaurants in every state, run music festivals and sporting events and of course create new menu items that you know and love. So we thought we'd ask this head chook a few questions about his latest creation.... What's the key to creating that perfect fried chicken? "Eating a lot of it. But, apart from eating a lot of fried chicken and testing, I really wanted to keep the DNA of a Grill’d burger ("guilt-free") in the recipe and a real chicken taste that wasn’t masked by a lot of ingredients or fillers. I wanted to take the parts of what I love about fried chicken, but without the guilt. It's why we chose to use 100% Australian RSPCA Approved Chicken Breast and not just using any odd bits as some others do." When you’re not working, what are you doing? "Two kids keep me busy, but in my spare time, I like exploring Mornington for great wines and interesting food. I've been listening lately to Muddy Waters & John lee Hooker, James Blake, The Rolling Stones & really enjoy my podcasts, like Smartless, highly recommend." Doz, or Dozza (take your pick) works as our Restaurant Manager at Tea Tree Plaza, and shes been able to enhance her leadership skills by leading and developing a team in addition to "learning how to grow and maintain a business".... This OG member of Tea Tree Plaza recalls the "real adrenaline rush" of moving back to Adelaide and helping us out with opening our 4th restaurant in SA. 13.01.2022 This is Sam. And this is her burger, a Sweet Chilli Chicken on Gluten-Free, trade the Beetroot for Roasted Pepper and add the Aged Cheddar. Cant beet that. When shes not heading up our Eastland restaurant, she can be found at the dog park with her Lab and Dachshund. With the Melbourne lockdown, Sams taken to making face-masks galore, playing online games with her mates and drinking copious amounts of coffee something we can all relate to.... A veteran of many years and many restaurants, Sam describes her experience as one of "person and professional growth, as Ive been pushed outside of my comfort zone, allowing me to develop into who I am today." Shes also chalked up an abundance of lifelong friends along the way. When asked about her most memorable moment, she couldnt narrow it down to one, but "helping plan and execute the Glenferrie Festival at Hawthorn, complete with a beer garden, DJ and fire truck is up there. As the current Assistant Manager at Melbourne Central, but a veteran of many restaurants, shes loved working across many of our restaurants and being able to "meet, learn from, and work with some fantastic people, lots of which have become friends for life". Youd think after working with so many teams shed have been given a nickname that sticks - were taking su...ggestions for her! When shes not working though, shes blasting Frank Ocean, playing netball (when not in iso), drinking wine and studying - there might be an oxford comma missing there but well play on. 02.01.2022 This is Patrick. And this is his burger. A Wagyu build with all the trimmings, even a few of our Australian grown jalapeos when feeling, and we quote, "dangerous". If youre not his mum, hes Pat. He manages our Glen Waverley restaurant, which, when asked to say a few words about, "has given me the opportunity to grow as a leader and connect with my team and my local community in a way Id never imagined! On top of this, getting to manage my restaurant in my own way."... As far as highlights go, hes had the chance to work at an a-bun-dance of different restaurants within a short space of time, allowing him to meet some pretty rad people.
