23.01.2022 Just a reminder that if you want your hydrangea to flower next summer you need to prune it gently before the end of Feb! Today I cut off some of the flowers down to the new growth. That's as far as you need to cut.
22.01.2022 It’s been awhile... But i thought I’d start to share recipes etc again. So here are some Buddha Bowls. I used some quinoa and brown rice as the base... Roasted sweet potato Sautéed kalettes and broad beans Garlic, soy and ginger marinated tofu (firm). To get the order right, you want to marinate the tofu in some sesame oil, soy sauce, a thumb sized grated piece of ginger and 2-3 cloves of minced/grated garlic. Dice up the sweet potato and roast to your liking, I like to get it a little caramelised. Put half the sweet potato on one side of a tray and the tofu in the other and then toast at approx 180deg C. Sauté the kalettes and broad beans in a little coconut oil - you can use any greens you have. ...and cook the quinoa/rice as per the instructions. Serve it all up, drizzle with a little extra sesame oil and soy sauce and enjoy.
19.01.2022 Loaded BLT Salad (Serves 2 hungry humans) The Base: 1 cos lettuce (chopped) 1 punnet cherry tomatoes (halved) ... 400g streaky bacon (grilled to crispness and then broken up) Toppings: 1 avocado (diced) Anchovies 3 soft boiled / poached eggs Dressing: 4 tbs Greek yoghurt 1 clove garlic (minced) Half a lemon rind (zested) Juice of half a lemon
16.01.2022 I wasn’t sure if this was going to work but - hurray! What a success! It’s a Lasagne x Moussaka made with: Grilled eggplant Ricotta / egg / cheese mix Lamb Shanks meat Tomato Sauce... It all starts by browning 4 lamb shanks in a hot frypan and sealing the meat. Then pop it in a slow cooker with 1 onion (cut into wedges) 6 cloves of garlic (smashed and pulled apart), 1 large bottle of tomato passata and a handful of fresh oregano leaves.This is going to cook for about 6 hours now so you have plenty of time to prep. I sliced 3 eggplants and grilled these in the oven in 2 batches, you will want about 1/2 cm thick pieces. Once they are all grilled set them aside. Once the lamb shanks are cooked take them out of the slow cooker and let cool, then dice up the meat. If the sauce is a little thin feel free to put this in a saucepan and reduce down to a thickness you like. For the cheese sauce I whisked 500ml of ricotta with 1 egg and 1 cup cheese (use whichever one you like best or have in the fridge). For the layering, add some tomato sauce to the pan first, then add the grilled eggplant, more tomato sauce, lamb, cheese sauce and repeat until all your ingredients have run out. Bake in a 180deg c oven until golden on top and this will be about 30minutes. Importantly, let this sit for at least 10 minutes before serving.
13.01.2022 When your husband puts cumin in the pancake batter instead of cinnamon He fixed it pretty quickly, jury still out if the extra cinnamon and nutmeg will overpower the cumin he couldn't scoop out!
