14.01.2022 One of my favourite easy go to lunch time recipes - chicken pasta with rocket, corn, red onion, capsicum, pine nuts and avocado. Drizzled with extra virgin olive oil and plenty of lemon or lime juice. Not only easy, but delicious. You can leave it in the fridge for quite a few days if you leave the avocado off and add before eating!
