25.01.2022 Buttery scrambled eggs with crispy kale, leftover baked purple sweet potato, and our Pepperberry Kraut is a breakfast worth getting up for! Some mornings I wake up with a craving for chips. Which usually results in everyone getting a good serving of crispy kale with their brekkie. Oven baking kale chips is probably easier, but I find it quicker to just fry them up, as I’m just too impatient to wait for the oven to preheat! The trick to getting them crispy on the stove i...s making sure the oil you are using is hot, the kale is bone dry, and the frypan is never overcrowded. This is another nourishing brekkie that we’ve been enjoying this winter. Always enjoyed with a hot cuppa of chai, this is a meal easily put together with pantry basics and makes frosty mornings that little bit warmer. 18.01.2022 PICNIC BREKKIE "Love heart bread" (egg- in -the -hole toast) is one of Tiny T’s most requested breakfasts. While her older siblings are out this morning, she requested for a special picnic brekkie on the verandah with baby T. The last month, though thoroughly blissful, has been hectic for the whole family. Being the previous baby of the family, Tiny T has slipped into the role of a big sister without a fuss and loves her baby brother to bits. Realising that I haven’t spent... much time with her recently, I know we both needed to have some special picnic bonding time together. Having done picnics on the verandah a few times, this girl knows the drill! She sees to setting up the picnic mat, getting the teapot and cups ready, and adding the sheep skin (for the baby" she explained ). She gladly entertained her brother while I prepared her favourite brekkie. It might have taken a lot longer to set a picnic up while juggling with a feed-on-demand newborn. But it makes it all worthwhile to see Tiny T in her usual picnic spot, savouring the first bite of buttery "love heart bread" with a satisfied smile on her cheeky face. Thank you, Mum. 15.01.2022 This is black gold - the type that only a fermenter would steal! This beauty has been sitting in the fermentery for the last couple of years, but there was definitely a lot more of it when it was first crafted. When I finally got around to checking it, some bashful fermenters admitted to frequently stealing spoonfuls of it while working. (I guess they discovered their umami tooth! ) This jar has since been hidden to allow the umamifying process to continue undisturbed! I have decided that it’s time to whip out the big guns and use this two-year-old shoyu koji in our latest batch of seasonal vegan kimchi. 15.01.2022 Whenever there is leftover quinoa or rice in the fridge, you can almost guarantee that brekkie will be fried rice. My kids love it so much that they have even taught themselves how to make it! It’s amazing how easy it is to make a tasty one-pan meal by throwing together chopped veggies, rice, and eggs with the subtle lashings of tamari, ground white pepper, and toasted sesame oil. Even my kids can easily manage it! They have recently discovered a love for toasted crispy rice ...- which is easily achieved by adding an extra heap spoonful of ghee and allowing the rice to crisp up at the bottom of the cast iron pan. I’m always blown away by what kids can do when just provided with the basic foundations of cooking and with time they get quite adventurous with the possibilities of textures and flavours. I have to say, it is pretty great to have older kids that can cook. Soon I might be able to retire from my kitchen position! .....not. www.gutsyferments.com.au

Yes, kraut juice packs a powerful punch to the taste buds and can lead to some interesting facial expressions, but it is too good to be wasted! 14.01.2022 FAIRY GARDEN CAKE I can’t believe that my little baby has grown up so much! If you’ve been following this account for the last few years, you would have seen this little one grow into this delightful little girl. This #gutsy baby’s love for ferments range from the humble sauerkraut to the funky natto. She regularly requests that extra pickle, helping herself to spoonfuls of kraut, gulping kraut juice out of the jar, savouring aged miso with carrot sticks or even finding joy... in stretching out the sticky strands of natto before gobbling it up with a simple seasoning of Tamari. She constantly amazes us by her intuitive cravings for ferments! Having grown up around fermented food, she has become quite the kraut connoisseur and takes great delight in going around the fermentery taste-testing the ferments fresh out of the barrel with me. This crazy year has thrown so many curveballs into the lives of little ones. With a birthday party thrown out of the window due to restrictions earlier this month, I thought it will be a huge disappointment for her to miss out on the party cake that we have talked about for ages. Determined to make a cake happen for Tiny T, all the kids teamed up by taking turns to cuddle baby T, bake the paleo choc cake, and prep the caramel (coconut sugar) buttercream and chocolate ganache. Assembling the cake was enough of a birthday treat for Tiny T. I think she enjoyed licking the spatula most of all! When the cake was finally iced and decorated, I simply couldn't believe what we had achieved - especially with a newborn in tow! Tiny T was most certainly pleased with her very own birthday cake. 13.01.2022 We love oak barrels for so many reasons! We believe that oak barrels are the best vessel we can use to ferment our vegetables. They are chemical-free, sustainable, and help to create some great flavours. During fermentation, vegetables will often get very acidic. Depending on time, temperature and levels of carbohydrates, vegetables can achieve a pH of 3.5-3 during fermentation. Vegetables fermented in plastic, poor-quality stainless steel, or even ceramic crocks with the wro...ng type of glaze, can be problematic. Imagine our acidic vegetables sitting in one of these containers. After 3-4 weeks of fermenting the flavour is noticeably changed... but what about the chemicals? This is why we love our oak barrels! Oak barrels are great as they contain no artificial chemical and produces lovely flavours. Fermenters have been using oak barrels for thousands of years for sauerkraut and kimchi. This nourishing meal, rich in gut-healing marrow and collagen, is another of our family's favourite winter meals - especially on those windy nights that we have been experiencing recently! 05.01.2022 Strong Calm Positive Loving Adventurous ... Honest Patient Intuitive Most importantly, a man after God’s heart. All of which describe this man who became a father more than a decade ago. This shot reminded me of Issac Newton’s quote If I have seen further, it is by standing on the shoulders of giants. I’m indeed blessed to know that these are the shoulders that our children are standing on to see further on their life journey. I’m not going to lie. Being a parent is tough. It all begins with the sleep deprived nights with a newborn to learning how to decode the complexity of a teenager’s mind (that’s just where we are up to in our parenting journey!). Yet each one of our children is a blessing. It is through them that we see a reflection of our weakness and fruits of labour. It is through them that we’ve learnt to embrace the difficult times and cherish the happy ones. And it is through them, we are always reminded the need of a loving Father whom we can call upon, lean on and seek strength from at all times.....especially when we are most weak and vulnerable. 04.01.2022 As the chill settles upon Sunny Queensland, our household has been craving hot brekkies over our usual smoothie bowls or chia puddings. Rice noodles with seasonal veggie & broth are always a favourite with the kids. As you can see, their Asian heritage comes out in their preference for hot brekkie food! To keep things interesting, we vary the broth we use, sometimes beef and other times chicken. If we are wanting something hearty, a drizzle of coconut cream, ginger s...lices, a handful of coriander, and a couple of kaffir lime leaves thrown in will hit the spot. (Chicken broth goes best with this combo). The cherry on top of this brothy noodle meal is the mouth-watering addition of Cauliflower Vegan Jerky - made from our Cauliflower Kimchi. 04.01.2022 When life gives you organic red capsicums, make vegetarian stuffed capsicums! This was a great way to use up leftovers in the fridge. I eyeballed the quantities and spiced up my cooked rice with tomato paste, ghee, fennel tops, parsley, red onion, ground cinnamon, ground cumin, and orange zest. And of course, seasoned with salt & pepper too! Bake in a preheated oven at 180C for 30-45mins or until the capsicums have softened and skin is slightly blistered. ... If you like, add a generous sprinkle of grated mozzarella for the last 10 mins for a yummy golden top! These were a fantastic side to any main meal or even on its own with a good serving of any @gutsyferments kraut or kimchi! 01.01.2022 It’s been a rough yet blissful week of working out a new family routine around our latest addition. The well intended plan to cook up nourishing meals and prep snacks often go out of the window having an arm full of baby (whom I savour every moment with!). Having gone through this newborn phase a fair few times now, I well know that these moments, though at times can be testing, are also incredibly fleeting. As I make the conscious decision to sit back, slow down, and t...ake time to enjoy my baby, we are blessed with family and friends that have kindly rocked up at our front door with nourishing meals and snacks. One particular snack, made by one of my sisters-in-law, was a winner - even with the kids who don’t particularly like walnuts! So I thought I'd share her recipe with you all. INGREDIENTS: 1 cup dried apricots (pitted) 1/2 cup dates (pitted) 2 tbsp chia seeds 1 cup cashews/almonds 1/2 cup shredded coconut 2 tbsp coconut oil 2 heaped tbsp hydrolysed beef collagen 1/2 tsp vanilla extract 1 tsp cinnamon 1/2 tsp turmeric dash of pepper pinch salt Simply put all of the ingredients into a food processor until broken down into a coarse crumb and then roll into 2.5 cm bliss balls. I especially appreciated that she added collagen peptides to up the gutsy factor in this snack. To make these bliss balls even more digestible, you could activate the walnuts and ferment the dried fruits in water kefir for 1 week.
