25.01.2022 Hey Cairns! We just thought we would say hi to all of our new friends and share with you a little about Guyala. We opened in February 2020 right before COVID-19 hit, like the rest of the world Guyala was shut down. However we took the opportunity to pivot and temporarily ran a takeaway business, @SmokeyPetes out of the venue. When Cairns allowed dine-in service to restart, we reopened our doors again with a new menu version 2.0, inspired by local ingredients with influences ...of world travels. Since then we've had the chance to show Cairns our take on brekkie- again, with menu design made by @ollyjames who has previous works with Caffiend, Tattooed Sailor Coffee Roasters, & many more. Our menu is thought-provoking and enticing. We are so thankful for the opportunity to open our doors next to Spinal Life, be in Cairns during these unusual and testing times, and for your continued support. Outside of assisting Olly and her father, Hayley has worked with a variety of different venues including bars, cafes, and hotels around Cairns. And its loaded with Australian Indigenous ingredients -better for you, better for the environment. Kangaroo loin brined for 3 days in a salt bath with star anise, cinnamon and clove, rolled in our paperbark smoked pepper, sous -vide at 57 degrees to keep it buttery soft. Layered in a sandwich with our Lemon Myrtle sauerkraut, our pickles,... Dijon mustard, melted cheese & a hint of spicy sauce. This is a delicious combo of salty, sweet, sour, peppery, smoky and layers of textures. Yum.

03.01.2022 Meet head chef Shaun Roseweir If you ever peek through the kitchen window you'll most likely see our head chef, Shaun Roseweir. Shaun has been with Guyala from the start and previously worked with the owner, Oliver James at Caffiend. Shaun's love of cooking started at home when he helped his mom recreate his grandma's dishes. "I never got to meet her, so this is a way I feel connected with her." Shaun loves working at Guyala because he's able to express his creativity in this space- his favourite dish is the Green Nourish Bowl because it's a healthy and refreshing option that can easily be made vegan.
