10.01.2022 Smelt so good I almost forgot to take a photo. Making vegan easy. RECIPE makes 8 patties.... Grate 2 potatoes and one zucchini into a bowl. Add 1 cob fresh corn kernals, Italian herbs, pepper, 2 tbs besan, 2 tbs buckwheat flour and a toss of pepitas. Mix well. Shallow fry in coconut oil. 05.01.2022 Day 2 Our Vegan Camp Dinner. Thai fried rice with seasonal vegetables and mango salsa. This is one of our go to meals in camp. We raid the garden looking for any shoots ( choko, left over winter peas) fresh tomatoes, beans, anything surviving the heat really then add the fridge remnants.... As you'll see with our meals there could be a few days in a row of trying to use the same ingredients. Tonight. Goodbye cauliflower. My easy salsa is a mix of fresh mango, garden tomatoes and a few scoops of kimchi. 1 min to prepare. As promised yesterday, here is my rose harissa recipe. 1 tbs dried red chillies 1 teaspoon garlic powder 1 tbs ground cumin 1 teaspoon crushed roasted caraway seed 1 teaspoon dried rose petals 1 tbs ground coriander 1 teaspoon salt 1 teaspoon cracked pepper Mix one measure of rose harissa with equal quantity of water ( 1tbs harissa/ 1 tbs water) Stand for 5 mins. Add half measure of oil (1/2 tbs) and stir. Season with some mint sprigs. Metta @ Sunshine Coast, Queensland

04.01.2022 Day 7 Our Vegan Camp A day of slurpies. Recipe. 1 bag of ice. Fruit and vegetables. 50/ 50 ratio. The two winners. Beetroot Crush... 1 beetroot 1 small knob ginger 4 apples 1 orange 2 large carrots 1 pear Orange Divine 4 oranges 2 celery stalk 1 small knob ginger 2 apples 1/2 pineapple First I juiced with our cold press then whizzed the ice through with a blender. So refreshing, nutritious, cleansing and cooling. Perfect for those living offgrid with no freezer (us) and wanting a little treat. The kids said they were way better than just juice. 02.01.2022 Our vegan camp...this one's a sensation. Miso kimchi laksa Recipe serves 4 4 cups mushrooms...all sorts sliced... 1 cup mild kimchi 2 cloves garlic diced 3cm ginger diced 200gr seasonal beans 1/4 cup coconut oil 4 spring onions finely sliced 1 heaped tbs miso 2 tbs coconut amino acids Vegetable stock to taste 3 tbs sweet chilli sauce 250ml coconut milk 1 heaped tbs yellow curry paste Salt and pepper. Heat oil on low and add the spring onions. Cook 3 mins. With a med heat, add the garlic, ginger, beans and mushrooms. Season with a little salt and pepper. Cook 2 mins. Add the curry paste and cook another 2 mins, stirring often. Now add the kimchi, coconut milk, sweet chilli and stock. Cook until it begins to bubble. Adding some water if it is too thick. Turn off the heat and add the amino acids and miso. Season with lime juice. Pomonas Little Pantry, Gyspy Green the Vegan Bus and Pomona Community House are joining forces to bring you simple vegan / vegetarian gf meal packs.... This will continue until further notice. Please call through large family orders Tamika 0401297818 Frozen meal packs can also be collected from the community house during opening hours. Please share this message with anyone you know who could benefit or come along for a friend to collect.
