19.01.2022 With the easing of restrictions around the country it’s been good to get back into a pub/bar and have a drink. There’s obviously still a long way to go but it’s looking up. 12.01.2022 The warehouse has been a buzz lately with the rotovap spinning and the still turning n’ burning. All in the name of R&D. Our next gin is on its way and it’ll showcase our modern take on a classic gin. We’ve taken meticulous care and attention to find the best flavour combinations from the most unique sources. We’ve been experimenting with varying temperature profiles and techniques during macerating and distillation to extract the most flavour. This’ll culminate in the Haiver Spirits Modern Classic Gin. More to come, keep your eyes and ears peeled...

07.01.2022 Straight out the salon fresh cut Haiver! We’re proud to share our new bottles, labels and gin. The Modern Classic, a savoury beast and our take on new world spirits. We’ve added habanero and sunflower seed to create a relationship between fruit and savoury. The drink gets a good whack of spice from cinnamon and bay leaf then a touch of sweetness and tang from Passionfruit, all of which is cold distilled maintaining freshness and vigour. The Botanical gin has had a makeover t...oo whilst retaining that great strawberry and mint cold distilled goodness. Available on the online store. Link in bio. 07.01.2022 You've probably seen us playing around with left over passionfruit a lot lately, we've been having some serious fun but it does all have a purpose. Passionfruit is a key ingredient in our new gin the "Modern Classic", which will be released shortly. It pairs perfectly with Juniper and compliments the citrus elements to create somewhat of a vibe... Our cold distillation process done under vacuum serves up the strawberry in a whole new light.
