Owned by a massive agricultural asset management company. ... They have 'no exposure to the weather' and can just close the birds up if there's a local case of avian flu. They had a case of ILT - a completely preventable respiratory disease common to shed production systems due to the poor air quality. 41,000 Frankenbirds per shed - 10 million per annum just at this farm. Look at the size of those breasts in comparison with their tiny wings - I think the guy called them 'protein bombs' or something. Blerg. The 'good news' part of this story is that they went solar as their power bill climbed towards $1 million/annum. The state government granted them $1.3 million towards the $5 million they spent to install solar. The claim that this 'abates' emissions to the equivalent of taking 1200 cars off the road or planting 2500 trees is smoke and mirrors - this power didn't need to be generated if the birds were raised on pasture. Moral? Don't eat chicken unless it's name was Colin (or you know the name of the farmer who grew it)." See more

One of the most influential chefs in this journey is @kylie_kwong who not only cooked our duck to perfection at her restaurant Billy Kwong , but who also wrote cookbooks to help home cooks prepare and present dishes using her extensive professional knowledge. Today I have prepared our Burrawong duck by steaming and deboning a duck using Kylie's clear instructions, however I have roasted the duck with lemons and oranges after rubbing the skin with pomegranate molasses and sprinkling with sea salt. The result was a crisp skin with tender flesh and a crisp citrus note to complete the flavour profile of the dish.
