25.01.2022 Healthy Chicken fried rice with heaps of vegetables and cooked with low GI brown rice. Chicken breast cooked in olive oil with garlic, chillies, ginger and salt. Once chicken is cooked add green beans, capsicum and cook than add mixed vegetables, corn, cabbage white stems, broccoli and cook for few minutes. Add egg in the middle of all veg and cook. Add soy sauce than rice and mix them together. At the end add fresh coriander leaves, parsley leaves, mustard leaves and Chinese cabbage. All greens fresh from my gardens.



24.01.2022 Made green mangoes pickles. Green mangoes are now in season. Dried them in dehydrator. Once dried mixed with Pickles masala, olive oil, Kashmiri chillies, sarso, methi, jeera, somp, ajwayeen, salt, green chillies and coriander seeds. All spices are roasted to get beautiful aroma before grinding and mixed to dried mangoes.

20.01.2022 Chicken curry, bitter melon, pickles and paratha - pancake for dinner. Paratha or pancake the easy way to make. Mixed 1/2 cup wholemeal flour, 1 tablespoon olive oil, 1 organic egg, pinch of salt, cumin seeds, pinch of chilli powder, 1 cup of chopped rocket leaves/fresh coriander leaves/mustard leaves, water. The batter should be runny. Pour 1/2 cup mixture on hot non stick pancake fry pan. Once cooked flip it over and cook on the other side and brush with olive oil. Makes 4 large thin paratha.

18.01.2022 Another snack like saina made from kale leaves. Chop them into small pieces and mix with channa besan and cumin, chillies, garlic, ginger, salt and fennel seeds. Wrapped in glad wrap and is steamed. When cooled slice them and shallow fry in olive oil.

15.01.2022 Budget cooking. 3 different dishes with one huge eggplant adding 1 cup chopped potatoes, 1 cup chopped green beans, 1 cup homemade yoghurt, 1 cup chickpeas flour and herbs and spices. Can easily feed a family of 4 with rice or roti. Dish 1 - fried eggplant....chopped 1/3 eggplant in circles and dipped in chickpeas flour with herbs and spices and shallow fried in Olive oil. Dish 2 - Eggplant with potatoes and green beans.... Chopped 1/3 eggplant into cubes and cooked with potatoes, beans and spices. Dish 3 - Eggplant with yoghurt.... Chopped 1/3 eggplant into cubes and cooked with yoghurt and spices with a touch of lemon juice.

12.01.2022 Semolina cake very healthy ingredients cooked on a stove. Ingredients used - 1 1/2 cups semolina, 1 cup almond milk, 1/2 cup olive oil, 1/4 cup stevia, 1/2 tsp baking soda, handful of almonds, 1/2 cup fruit mix, pinch of cardmon powder. Mix all ingredients together and leave it for 20 minutes. Heat salt in a pot. Place cake mix in the baking tin and place inside the pot on hot salt and close with the lid. Leave the stove on low and cook the cake for an hour.

10.01.2022 Banana bread/cake. Healthy no sugar added with whole meal flour. Added bananas, raisins, dates, almonds, cashew nuts, coconut, organic egg and olive oil.

09.01.2022 Bitter melon karela with egg....eat like a snack with chilli sauce or guacamole-avocado dip. People who don’t like bitter melon try this way and I am sure you will start eating bitter melon which is very healthy. Ingredients used - bitter melon (organic and fresh from my gardens) chopped and deep fried in olive oil for couple of minutes on high heat, eggs, corn flour and chickpea flour, chopped red chillies( fresh from my garden) fresh coriander, cumin, garlic and salt. Mix all ingredients together and cook like an omelette on non stick fry pan. 5 minutes on each side on low heat until golden brown. Slice in thin strips and serve hot with sauce or dip.

Made curry in tamarind sauce garnished with fresh coriander leaves from my gardens served with boiled cassava all the way from Samoa. Fresh guavas from my gardens

01.01.2022 Healthy breakfast egg omelette with a piece of wholemeal multigrain toast with black coffee no sugar and a piece of papaya. Mixed 2 eggs with fresh coriander and parsley leaves from my garden, carrots, peas, corn, green chillies and salt and cooked on pancake frypan and no oil used.
