Not many spuds but well and truly enough for a delicious, crowd-pleasing potato salad to take to tomorrow's barbecue My recipe for an easy and delicious Potato Salad: Wash and scrub potatoes, cut into 2cm cubes, steam until they soften but don't fall apart when you touch them. Set aside to cool. In a small jug, add equal parts mayonnaise and sour cream with a decent spoonful of seeded mustard, cracked black pepper and a teaspoon of salt. Add half of this mixture t...o the potatoes, mix gently to coat and put in the fridge overnight. The next day, add the other half of the mayonnaise mixture to the potatoes (they will have soaked up the first lot overnight) then chop up a small bunch of spring onion and 2 rashers of free range bacon, fry together over medium heat and sprinkle over the top.
