15.01.2022 Janelle's Recipe of the Month, Apple and Cinnamon Layered Cake! 125 grams butter, softened cup caster sugar 2 eggs... 2/3 cup SR flour 1/3 cup plain flour cup sour cream 2 apples, peeled and thinly sliced 1 teaspoon cinnamon Preheat the oven to 180C. Grease or line a 20cm round cake tin. Cream butter and sugar in a bowl with an electric mixer until light and fluffy. Beat in eggs, one at a time. Fold in the sifted flours and sour cream, mix until well combined. Using a spatula spread half the mixture over the base of the cake tin. Arrange the apple slices, and then top with the remaining cake mix. Sprinkle with cinnamon and a little caster sugar. Bake in a moderate oven for 50 to 60 minutes. Stand for a few minutes before turning on to a wire rack to cool completely. NOTE: Make sure you use just under half the cake mixture to spread on the bottom of the pan. It might seem like there is not enough mixture to cover the apples but just take your time to spread the mixture thinly
