09.01.2022 Howdy Friends - So, im just wondering how you guys feel about what im about to put out there... how many people would be interested in some free (yes, free!) vegan cooking classes? It would be more aimed at people who want to go vegan but dont really know how, or for new vegans who simply want to have more confidence in the kitchen. I would not charge for the classes & would like to stress this is not coming from a 'for business gain' place, I promise - but rather from a 'I l...ove cooking, I love sharing the vegan love, I want to contribute something positive to my community' place. Im not exactly the vegan equilivent of Jamie Oliver, but I do have commercial cooking experience, a vast reperoire of healthy, easy vegan meals & a real passion for it. We could share ideas, our favourite vegan products & where to find them, discuss the 'good & bad' of vegan products. Thoughts? Happy to answer any questions or anything. Much love xo See more



09.01.2022 Check out this fresh, bountiful & stunning harvest from Manjimup - such lovely, winter produce! To celebrate, here's my go to Dahl Recipe - works every time! Serves 3-4 people. xo 2-3 x tbs of coconut oil or olive oil 1 x large onion 3-4 x cloves of garlic... 1 x knob of ginger 2-3 x kaffir lime leaves (optional) 1 x cup of split red lentils 1 x cup of slice mushrooms(optional) 1.5 x Vegetable stock cubes or 2-3 cups liquid veggie stock 2-3 x tablespoons of curry powder Qty x any veggies you like (carrot, zucchini, brocolli, capsicum, peas, squash, pumpkin, sweet potato, potato, tomato, kale, spinach, anything goes!) 1. Boil at least 3 cups of water to use for later 2. Fry off diced onion in coconut/olive oil until slightly brown on medium to high heat 3. Add mushrooms & kaffir lime leaves (bruise the leaves or score with a knife to release the oils!) add more coconut oil now if needed - cook until the mushrooms soften a little 4. Lower the heat & add lentils & curry powder, stiring to ensure the curry powder doesnt burn (cooking off the curry powder like this benefits the spices!) 5. Dissolve you stock cubes in 3 cups of boiled water & add to lentils - or add liquid stock now 6. Add Garlic & Ginger - I like to grate mine in, but diced or crushed is fine too 7. Give a good stir, add some salt, turn down the heat to low & put the lid on 8. These lentils should only take 15-20 minutes to cook - they are ready once they are soft 9. About 5-7 minutes before serving, add your veggies - adding them in last keeps them crisp & only lightly cooks them. If adding kale, spinach or other leafy greens, remove from heat & add at the very end. NOTE: Lentils & pulses like water - you may need to add more stock/water during cooking. Keeping the lid on helps the water to not evaporate completely, but do watch this. Serve as is ,or with basmati or brown rice, or with crusty bread :)
