19.01.2022 Miso soup for lunch. Eaten in the sun while it’s still out. Being able to quickly make a hot, healthy lunch like this is one of the benefits of this enforced working from hone. I simply simmered what veggies I had in water, added cubes of tofu and seaweed flakes before mixing in the miso paste at the end

18.01.2022 I’ve decided the only way my family and I are going to get through this second #lockdown is by enjoying lots of delicious food. I’ve been a bit slack lately and left a lot of the food preparation to my husband. Hopefully if I put more conscious effort into my cooking that it will give me something to focus on and give my family something to enjoy. This morning I felt like some breakfast muffins. Rather than spend time looking up a recipe, I decided to create my own and I’m q...uite happy with the result. They’re a mixture of #healthy and #notsohealthy I used mashed banana and grated apple for sweetness, but then also added a small amount of rapadura sugar. I used oats and ground linseeds to add fibre, but then added some self raising flour as I wanted the rest of the family to enjoy them. They’re delicious as they are, but even better slathered with organic butter.

16.01.2022 Tofu scramble for breakfast. Sauté an onion until soft. Add a teaspoon of turmeric and 1/2 teaspoon of salt. Add crumbled firm tofu. I added tomato, silver beet and parsley. High in protein, phytoestrogens and antioxidants. Also yum.

08.01.2022 Being unable to change my surroundings has made me crave variation in my food, particularly the meal I’m most obsessed with, breakfast. This is masala oats, a savoury, spicy porridge made with onion, tomato, kale, turmeric, cumin and green chilli. Delicious with a fried egg on top!

08.01.2022 Savoury porridge (or oatsotto) made with mushrooms, silver beet and feta. Such a delicious breakfast. I can feel certain friends groaning and rolling their eyes at a savoury breakfast, but really, they don’t know what they’re missing out on!

07.01.2022 At least we can still have cake. #melbournelockdown I thoroughly recommend this chocolate olive oil cake by @nigellalawson Its fudgy and chocolatey and super quick and easy to make. It’s also gluten and dairy free! I love a recipe that creates a rich chocolate taste just by using cocoa and not having to use a bar of chocolate. (Mainly because that means I get to have my cake and chocolate too...)
