20.01.2022 That belly skin we removed from the bacon yesterday had a lovely nap in the fridge overnight covered in salt. Cooked hot till it turned golden and crispy. Can't waste gold like this. Mmmmmmmmmmmmm crunchy bacon crackle, whoops just drooled on my keyboard.

17.01.2022 MAKE YOUR OWN SWEET MAPLE BACON DAY 5 BACON LEVEL 11 ACHIEVED Dried in the fridge uncovered for 2-3 hours then into the smoker for 4 hours with some hickory till internal was 74 degrees. Oh the smell is driving me insane. Rushed in inside and sliced a sample. Oh my god sweet, salty, smokey bacony goodness - now I remember why I make this bacon. ... 17.01.2022 MAKE YOUR OWN SWEET MAPLE BACON DAY 5 TODAY IS THE BIG DAY Pork belly has had 96 hrs in the Carnivore Candystore Bacon Rub. Smells amazing, looks great and ready to get cooking. Remove the belly from the liquid Bacon Rub and wash all the rub and liquid off the belly under cold water, then pat dry with paper towel. We have made it to cured pork level and this beauty will cook up with amazing smells and flavours.... However, we are going to take it over the top to the bacon level. I will put the belly in the fridge uncovered for 2-3 hours to allow the outside to dry and become tacky. After this we will smoke the belly. You will notice by day 3 that the pork has firmed and starting to darken from sitting in the bacon rub. There will also be more liquid drawn out from the pork belly. 03.01.2022 MAKE YOUR OWN SWEET MAPLE BACON DAY 1 We talk it, we dream about it, we use on almost everything, so it is time to live the dream and make our own Sweet Maple Bacon. Take 1.5kg piece of pork belly and remove the skin (save this for a tasty treat), coat bacon in 100gr of Carnivore Candystore Maple Bacon Rub and tuck it in for nice little rest in the fridge (looking at 4 to 5 days curing).... Check in tomorrow for day 2.
