10.01.2022 G'day guys, just an update Unfortunately, due to the winter slowdown, we don't have enough honey to supply this coming Saturday's Manly markets on the third. The good news, however, is that the bees should be picking up again with the coming warmer weather. We should be back up and running for the fortnight after. Sorry about this, we try our best but I'm not willing to compromise on taking honey away that isn't cured yet. Meaning our overall production is slower than others ...but makes for a higher quality honey due to lower water content. Thanks, Alex.

08.01.2022 To understand what makes Hawk Hill Honey so special, you have to first understand our process. When honey is first made by the bees, the water content of the honey is often between 35-50%. At these levels, foreign yeast and bacteria can infect the honey and begin to ferment it, causing the taste and quality of the honey to decline as well as ruining its ability to stay fresh.
