21.01.2022 It’s now heading into that warmer weather, and tropical fruit is in season. Why not try this delicious, easy to cook - Kiri’s Thai beef and mango salad, created by my amazing sister @keepingupwithkirirosie Ingredients Dressing-... Juice of one lemon 1 teaspoon fresh garlic- chopped fine 1 teaspoon fresh ginger- chopped fine 1 tablespoon soy sauce 1 tablespoon fish sauce 1 tablespoon sesame oil 1 tablespoon finely grated palm sugar Salad 1 large slice of HMC yearling beef rump steak, between 500-700grams 1 large mango, sliced into thin strips 1/2 butter lettuce, washed, chopped into large pieces 2 Lebanese cucumbers, halved lengthways then sliced thinly 1 packed of cherry tomatoes- quartered 1 long fresh chilli, seeds removed, sliced thinly 1 red onion cut into thin slices 1 bunch of fresh corriander, leaves only, chopped roughly 1/2 cup of salted peanuts, chopped Method 1-Add all ingredients for the dressing into a small bowl, stir to combine. 2-Place steak into a large glass dish, add half of the dressing to the steak, cover with cling wrap and refrigerate for 1-2 hours. 3-Preheat a barbecue hotplate on high. Lightly oil the hotplate. Cook the steak for 3-4 minutes each side for a medium steak. Transfer to a plate, cover with foil and allow to rest for 10 minutes. 4-Divide lettuce, tomatoes, cucumbers and mango into 4 bowls. Thinly slice beef and place on top. Finish off with corriander, peanuts, chilli and dressing. 5-Enjoy!!!

12.01.2022 With the current nationwide shortage of meat we are experiencing the highest wholesale costs on record. We are doing everything we can to continue to give our customers the best quality we can, but unfortunately thats coming at record costs that we unfortunately have to pass on. We are sorry for this inconvenience but its not feasible to leave prices as they were or we would send ourselves broke in a time the meat industry is already struggling. We will definitely be dropping out prices as the market relaxes back to normal. When that is, is still unknown with the corona virus pandemic creating excessive purchasing. 10.01.2022 This week, from @charlie_grilled we have #wagyu #burgers Wagyu Beef Burger with special sauce The burger patties are made with a special blend of Wagyu Chuck and brisket burger mince from Hayward Meat Co. This makes all the difference when making burger patties, you will only need the meat and some sea salt. If you can’t get any wagyu mince, a premium beef mince will do. ... INGREDIENTS 600g wagyu chuck and brisket burger mince Sea salt for seasoning Vegetable oil for the bbq 4 slices short cut bacon 2 tomatoes sliced 4 butter lettuce leaves 4 slices of cheese 4-5 pickles sliced lengthways 4 brioche burger buns 1/2 cup of whole egg mayonnaise 1/4 cup sweet mustard pickles 1/4 cup tomato sauce 2 teaspoons mild english mustard 1/2 teaspoon cracked black pepper METHOD 1-Divide your wagyu mince into 4, roll each serve into a ball and flatten slightly to make individual patties- don’t add anything to the meat. 2-Mix together the mayonnaise,mustard pickles, tomato sauce, english mustard and pepper into a small bowl- cover and place in the fridge. 3- Slice your tomatoes and pickles, wash lettuce leaves, slice brioche buns. 4- Heat up your hot plate on the bbq to a medium-high heat, use some vegetable Oil to lightly coat the hot plate. Season your wagyu patties with a generous amount of sea salt- no pepper, trust me!! 5- Place your patties onto the hot plate, place bacon onto the hot plate- turn bacon while cooking your patties. Use the back of trowel to flatten the patties, if you don’t have a trowel you can use a metal spatula. Cook for 2-3 minutes each side or to your liking. Remove from hot plate. Optional- Place buns cut side up under a grill to lightly toast. 6- Use a tablespoon of special sauce, followed by the pattie, cheese, bacon, pickles, lettuce tomato and more sauce to assemble the burger. 8- Enjoy!!!

06.01.2022 Quickly banged up a silverside eye roast for a customer (upon request) and they decided to Take half, so I took half home, Smothered it in Dijon mustard, rubbed in black bears beef rub and cooked over Argentinian charcoal. Last minute decided to throw on a jacks creak Wagyu MB9+ sirloin I had laying around and that was dinner!
