24.01.2022 I got a spare 15 minutes amongst all my Christmas orders (that I’ve failed to photograph ) to make a trial batch of a proposed flavour for next year..... creme brûlée macarons! (In honour of my husbands extreme love of custard) I’ve tested them out on family, I’ve tested them out on friends, pretty popular all round. 19.01.2022 Fresh out of the oven for tomorrow’s deliveries. One of the main reasons I would rather stay up late and bake everything as fresh as possible is largely because coeliacs normally only get things that have been frozen then defrosted on the shelf; you can’t go to a regular supermarket and find anything FRESH. I was initially just testing my templates I’d made up but got carried away and did 2 full flowers before I knew it. 05.01.2022 What a question for 2020! I think even the most resilient mind out there would have taken a hit this year, so please take today as a reminder to check on your friends. Check on your strong friends. ... Check of your happy friends. Check on your sad friends. Check on the friend that always bounces back. Check on the friend that is the helper Check on your friend that always has it so together they appear super-human..... Other people’s coping mechanism may not look like yours. I know for myself I was extremely good at helping others in crisis, I had an ability to wade through the dark and messy and give people the space to feel. And then try and get them the help they needed. What I wasn’t good at was identifying my own problems. After years of seeing people on their worst days I had begun to take a little bit of everyone else’s crisis home with me, each day a new little bit to take with me and keep me up at night. I stopped sleeping. I was a helper. I was a good helper. I was very good at listening. I was an empath on steroids. And I took it all home with me and couldn’t sleep and then I realised if I didn’t step away I was one or two major events away from my own mental health crisis. So step away I did. I went and spoke to someone, I got the help I needed and I had an amazing support network. Admitting I was no longer ok was one of the hardest things I had done but it was also the best thing. It is OK to not be OK. Back to cakes tomorrow

03.01.2022 This was the most talked about flavour in the last week of macarons. salted caramel. Yeah we know the flavour has been done to death (thanks Masterchef) but when you get the balance just right it is a magnificent beast. I make this caramel from scratch, it has gone into the layers of some of my favourite wedding cakes (especially when I add whisky and hickory smoke) and now it lives inside my new favourite macaron paired with delicate lake-salt flakes. ... 01.01.2022 So..... I’m a bit obsessed with colours. All of them, how they fit together, how they feel, how the slightest hint of a contrasting colour can change the dynamic. But I started getting frustrated with myself when I look back at my notes and it says leaf green..... what one you dumb cow? You have 3 different brands with a leaf green all of them are different! ... Well guess what my extremely compulsive self went and did? Yep, I have now got colour cards for every single gel colour in my house, with the colour codes that make it up listed in order for good measure. So when someone says pink I can be like what one? I have 20 Anyways this is what my procrastination from admin looks like, oh and I still haven’t even looked at my photos of cakes from weeks ago.....
