25.01.2022 I’ve finally crawled off the couch after a mammoth binge watch on Netflix. I’m new to Netflix so I had to do that to get it out my system. Why did I ever start Now I’m bloody hooked. Because I’ve been a couch potato I had to balance that out with a good stretch and then headed out to a nutrient packed lunch. I’ll tell ya, you ask and they shall cater Vietnamese bowl, hold the grains but extra salad, veg and to go with my crackling pork belly. So good to break my fas...t and re-fuel my brain on today. 24.01.2022 STAGE 3 of the Heysen Trail. Tapanappa to Balquhidder. Each stage so far delivers such diverse terrain and scenery. A tough going section with 4km of soft sand along the Tunkalilla Beach followed straight up with a 400m bloody steep slippery climb. I feel every muscle today but I loved it. I knew I’d like hiking but never thought I’d fall so much in love with it. 17.01.2022 It feels like it’s been a full day already today. The whole house was up a 5am this morning. I was up out the door by 5:30 for my walk, then for a quick 30 min yoga flow followed by a swim down the beach. 14.01.2022 C U R R Y N I G H T . Since the Adelaide weather has cooled slightly it’s totally doable to have a tasty curry. In summer. I’ve made a 1/2 organic lamb and 1/2 sweet potato. I prefer to bulk out my meat Curry’s with veggies for many reasons ~ 1. Organic meat goes further. I love buying organic good quality and ethical protein but it is more expensive. So by bulking out your meat dishes with veggies it doesn’t get to costly. I’ve used 500g of lamb and 500g of organic s...weet potato. I also would use cauliflower, broccoli or brussels sprouts as the veg component. 2. Gets more veg into your diet and increases nutrition. . We have served our curry with a good form of resistant starch aka cooked and cooled for 24 hours white medium grain white rice. Yep white rice prepared this way provides resistant starch which provides food for our gut bugs. Resistant starch is a type of starch that isn’t fully broken down and digested, but rather turned into short-chain fatty acids by intestinal bacteria traveling through the GI Tract providing food for your gut bugs. Feed your good gut bugs some food and make em grow and be happy. . All that’s missing from my dinner is a good dollop of coconut yoghurt and fresh coriander. 12.01.2022 Stocking up the freezer for Kindy lunches. Tried @jowhitton from #quirkycooking’s Corn Bread. It’s a recipe I’ve often looked at but never made until today. I loved it with butter slathered all over it. I’ll pre-cut this loaf to freeze and pull out for the lunchbox when needed. Kindy is a nut free zone so it’s wonderful to find another quick gluten free bread to have that doesn’t use nuts. 07.01.2022 My first experience of hiking the Heysen Trail Stage 1 - Cape Jervis to Cobbler Hill. A very memorable day. Beautiful weather. Awesome company. New friends and trek buddies.
